Number one, don't think you are walking into a traditional cheese shop in France or even Québec City. You are not. The place is big but the selections not so much. It is designed like what it is, a tourist venue. That said, this is a highly popular place for the locals to meet and greet and catch the contagion-of-excitement in a line up to buy the local specialty, Basque cheese curds (like strings) in a sealed bag of various sizes.
For me, the cheese was inedible. It is loaded with salt and you cannot taste the fresh natural cheese because it is LOADED with way too much salt. Additionally, if you are an additive conscious individual and try to avoid unnecessary non-natural ingredients then you'll not be pleased to find "calcium chloride" added here also.
We tried other cheeses offered for sale, bries. They were OK, not theirs, nothing special - but I noticed calcium chloride present also. Commercially available Brie in supermarches or supermarkets either in France or the U.S. do not have these needless additions normally.
Again, for me, the salt issue in their specialty of the house cheese made it inedible for me and I feel this is more about the hype, the "sizzle", and not about quality substance.
I cannot recommend personally at all.
