The chef, an assistant, and the waitress who also works as the greeter. Never a pause but never feeling rushed when asking for recommendations. It is an all hands on deck operation. Short menu and in this case excellent execution. My second time having a Rossini and this place made it better. I like how they modified it for the better. I appreciate how the principal taste wasn't salt and butter. I could have drank the jus, which was fortified with cured pork. They opted to serve it with crusty bread over a crouton and it ate better. Who wants a soggy greasy crouton? The dish was balanced with full on umomi without feeling heavy. Nice sear on the filet and the foie was exquisite. I would have opted for shallots over red onions but oh so minor a preference. I went with the Galliac wine recommendation and it did go well with the beef. A tannic young wine (which I usually don't like), but leave it to France to make anything taste good. The dessert wasn't the star but no complaints with the babba rum cake. I like the fresh fruit addition which seeped into the rum. This place seems to specialize in cassoulet (not my favorite). However, if I were to try it again it would be here with duck confit. Only ten tables so I strongly recommend making a reservation. On this evening no further availability. It is easily done with a link on their website with a credit card hold. Ladies, don't wear heels unless you are a ballerina with excellent insurance. The semi-spiral staircase to the bathroom is steep with small steps.

Had the tournedos, one of my favorite dishes on the menu, and the gauffre. One person I was with had the cassoulet. Food is always very well prepared. Menu does vary. Good selection of wines. Pleasant ambiance.

The restaurantuer was very happy to use his tiny English and we used our tiny french to understand each other as best we could. We made it work. The scene is extremely rustic and homey. The food is apparently traditional farm-style french food. We were served oodles of cold appetizers: -fresh sliced tomatoes with pesto sauce -carrot salad -pate -radishes and homemade herb butter (he seemed to be indicating that they went together, but I may have misunderstood) -hardboiled eggs and homemade mayonnaise -fresh bread -fish salad -cured meat It seemed to go on and on. We'd snacked beforehand since our reservation was at 8, so I began to worry how I'd find room for the hot and cheese courses! I managed somehow... The hot course was stewed duck in a cream sauce with boiled potatoes on the side. This was the course that impressed me the least, but was comforting and simple. The cheese course displayed various cheeses, a flan, rice pudding, and stewed pears and prunes that were delicious. Fresh fruit and a hot chocolate cake rounded it out. We thoroughly enjoyed it, but again, if you're not up for having someone else take the wheel, this might unnerve you. I also felt a little internal pressure to eat everything and say I liked it, even if it wasn't my favorite, just as I'd do at Grandma's house. Worth a try and very memorable and authentic.

We spoke little French but felt at home and everyone was friendly and happy to explain/help as needed. We called ahead and sat down right when it opened. Seats filled up within the first 30 mins-1hr.

Except this one was served with some crusty bread that soaked it up in folding layers and made it even better. Then some quail stuffed with raisins in a sweet but not gloppy sauce (cornstarch-dependent restaurants please take note) and some kind of delicious green potato smear (we fought over it and dragged everything on the plate through it) and a salad filled with vegetables that tasted like they probably picked them from the garden 3 seconds ago, as per usual in France.

Really great Michelin-star restaurant in the cute village/town of Quint-Fonsegrives…read more The history of the restaurant is neat: the chef apparently fell in love with the little house the restaurant is located in, right across Quint-Fonsegrives' city hall, as its architecture is typical of the region, it has a backyard where are planted herbs & more and as it is near lots of fields/crops which remind the theme of the restaurant: Nature. We had made a reservation about a month and a half in advance for a Friday night. We arrived at 8 p.m. - the restaurant isn't open before, for dinner. The wood tables and tree decoration inside the restaurant made the style very unique and again, remind you of nature. We were seated near the open kitchen so we witnessed the arrival of the Chef and his team and their whole cooking. We were asked by the waiter if there was anything that we do not eat or food allergies. I should have said that I do not like game but didn't think they would serve it (I knew they had in the past but figured they probably vary a lot their cooking). We had fish, pigeon, cheese, figs, macarons... Very original mixes for every dish. The portions were not tiny at all. Even if I'm not crazy about pigeon, I could tell the cooking was mastered perfectly. The Chef likes to decorate his plates with edible flowers. The wine served with the meal was very good. As you leave to pay, you end up in the Boulangerie of the restaurant, where we tried some homemade nougat. It was very very very good. Apparently, if you want to go have lunch there during the week, the wait time to have a table is just a week. The restaurant is closed in August. Very affordable for a Michelin-star restaurant, around 60 euros per person (VS. nearly 100 euros downtown Toulouse in other Michelin's).

Overall, great place for dinner. Some helpful information for visitors: They also speak English in the case that you struggle with French. Further, they also accept Diners Cards, which might be helpful if you don't use the big giants (Visa or MasterCard). Nearby, they also have several ice cream and gelato spots! The restaurant has one Michelin star so we were quite excited to try it. Located in the countryside outside of the city, the restaurant is housed in a beautiful villa with patios for those who want to stay outside to eat. The building was airy and gorgeous. Even their washrooms were very clean as a side note. We decided to stay inside and the courteous staff came over to take our drink orders and give us our menus. As a starter I ordered a dish of salad along with a baked tomato cheese that I don't know the name of. It was very delicious so it definitely bothers me that I don't! The main dish was fried squid with rice. I loved the cook of the squid since it can sometimes get a bit rubbery when not cooked well. For dessert I ordered a decadent chocolate mousse! This was all washed down with some white wine which I also enjoyed. Service was very attentive. Too bad I don't live in Toulouse but I would definitely come back if I ever visited again.
