(We made a reservation for 6 but ended up with 4... yet, you will still only get 1 stove if there are 6 in your party). While my friends were busy talking, I was busy stirring the crab miso, making sure they didn't burn. And then everything else came... It felt like chaos. Although our server did help us with how to grill some of the dishes, it felt very disorganized and rushed. I mean, when the tempura and salad came at the same time and the crab miso is ready to be consumed... which one should I eat first??? This really took a lot of points off for me. They presented a six-course set menu with some really diverse and unique plates. There was a scallop dish, a tuna ceviche, a tomato bisque and a Wagyu steak for the main course. All really well prepared and presented. Of all the restaurants my wife and I have gone to in HK, this was the first time I saw her give the wide eyes- mouth drop expression when the bill came. Again, I hope this was just NYE gouging, otherwise I could never say Watermark delivers a bit of value for what they serve- no matter how good it was.

I can't hardy think of a location in Hong Kong which ahs an entrance like the Watermark- completely private and has ambient lighting, water features- the whole set up. Given that this place is not some swanky hotel it really is a surprising feature for me. The second thing is that this restaurants sits right by the harbor side, you actually see the ferries coming in and out right next to you and its difficult to find a place which has completely unobstructed view of the harbor whilst you stuff your face full. Pier 7 looses out on this because it faces backwards towards town. The food? As you could imagine its seafood and grill the whole way. I would describe it as right for the price; it won't be getting any Michelin stars just yet as in my opinion its not quite fine enough but it certainly does the job here in creating a proper, formal dinner experience. On this subject, the venue is open to bookings by groups and depending on the numbers you have you may take only the upper level or the entire place if you have enough guests. The drawbacks? Well it might just be me but I find the place to be a little bit on the warm side given the entire restaurant is surrounded by glass panes and on my visit I felt like I was sitting in a greenhouse (note: came here for lunch). Not a good thing in Hong Kong summers. Other than that all I can say is that it is a bit of walk from Central but we could all do with some exercise after a leviathan of a lunch. The restaurant is a "dai pai dong" style eatery. There is outside and inside seating, but it's not comfortable. You'll be sitting in a crowded atmosphere, often on stools, and things will be discombobulated. However, if you can get past this, you'll enjoy some delicious Chiu Chow food. I am a huge fan of Chiu Chow cuisine, especially since we don't get it in the US. Whenever I'm in HK, I make sure that I get my fill of it. At "Sang Cheong" -- direct translation of the Chinese name 生昌, you'll get authentic and traditional Chiu Chow dishes. My favorite is usually the crab and prawn balls which are fried to perfection and served with a sweet dipping sauce. Check out the mullet which is served at room temperature with a pungent bean paste dipping sauce. On the night of our visit, they had a soup laden with pickled sour mustard greens, pig intestines, pig ears and pork. There is an abundance of white pepper to kill the gamey taste from the innards. I don't mind the soup, but I can't eat the intestines. Fried Bombay Duck is a type of fish which has the texture of tofu. The flesh is soft and I absolutely love it. The Chinese name for this fish is "nine stomach fish" 九肚魚 and it is the first time I've ever eaten it. I'm hooked!! It is prepared salt & pepper style. Delicious! Roast Goose is the most typical of Chiu Chow dishes and the one here is decent. Dip into the vinegar! Food is good, and it's a great local experience!

The non-seafood dishes are also prepared deliciously as well, but definitely try all the different types of fish, shrimp, scallops, jellyfish, and other highly recommended items (from their advertisement in the front) first.

Probably one of the better Spanish places in HK. It's very spacious for Central and they even have a live band on some nights.
