There is also a brief walking tour and intro to the restaurant and hotel, although as a restaurant guest you are not allowed to wander around the grounds, for the privacy of the hotel guests (it does cost over $1500/nt!). The restaurant itself is also very stunning. If you're a tequila lover, you'll be in heaven, as they have thousands of bottles of tequila, over the decades. Not sure if all are tequila or some mezcal, but you get the picture. The dining ambiance is great. Sitting outside, you overlook the amazing hacienda gardens. Inside, there are floor to ceiling windows, and a very romantic mood in the evening. Service is excellent, can't fault it. Food is great. Menu is limited, but every dish is unique. I highly recommend ordering the lechon (suckling pig) - truly spectacular. In fact, its probably big enough to share between two, and just order separate appetisers. The venison risotto was recommended by the waiter (chef's signature?). While it was executed perfectly and delicious, it didn't have a huge "wow" factor. Still, if you like risottos, you'll have an amazing dish. For dessert, the chocolate tamale sounds interesting, but really it is just a spin on a chocolate brownie with ice cream. Delicious and well executed, but sounded more exotic than it actually was. The only blot was the pricing of water. Charging approximately 240 pesos for a half bottle of mineral water, is just price gouging in my opinion. The drive into the hacienda is also through some bumpy roads, and a very poor village. So if you come for dinner (from outside the hotel), be prepared for a somewhat scary drive/ride back. We dined at the well-celebrated Pujol in Mexico City; if given the choice, we'd rather come back to Ixi'im again instead.

All the while I am thinking where on Earth I am being taken. We park the car and are greeted by our hostess Carol who walks us to the restaurant and proceeds to show us the vast collection of tequilas on display, as if we were in a museum of the drink. We are then served by Josue who took us on an amazing journey through the flavors of the Yucatan. We ordered the lobster, shrimp, and venison risotto, as well as a chocolate tamal and melipona honey ice cream. Along the way, we were given some complimentary bites that were just as exquisite as the rest of the food, including a seafood broth, a black sapote sorbet, and a mango kombucha sorbet. Everything was just top notch and I will remember this meal for a long, long time.

Service is very friendly, knowledgeable and attentive. Servers Carlos (dinner) and Jocelyn (breakfast and lunch) were great. They were very helpful with our limited Spanish. Given the US dollar exchange rate, the prices were extremely reasonable. The setting is beautiful. Wow, where to start…read more.... Well, if you find yourself lucky enough to be visiting Yucatán you have to stop at this restaurant located in the sleepy town of Tixkokob located approximately 15-20 minutes outside of Merida. Yeah it's a bit out of the way but if you want the best cochinita pibil in the state, dare I say- the country of Mexico- this is the spot. Sure there are other spots in or near Merida but hands down this was my favorite. We were heading back to Merida from a day trip to the town of Isamal and had planned our early super to be here. The restaurant itself is a jewel located in the town and once you walk into the restaurant you feel as if this restaurant can be in any major metropolis with vast quantities of 5 star restaurants. The restaurant is beautifully decorated both inside and outside- if you have a chance take a walk around the outer patio and see where the ovens are located where they made your meal. Now the food! Well let me say that if I could have eaten the metal tray that the order of cochinita pibil came on I would have done so! The pork was very flavorful and moist and the consome (broth) which is from the pig itself was so delicious. Fresh corn tortillas come with the order as well. I didn't want this experience to end but there is only so much goodness one can handle. We also had the guacamole and the mofongo to start and share. These were also tasty. All around the service (as with every other place we visited in Yucatán) was top notch with the friendliest of people. The hostess also gave us a tour of the grounds and explained the history of the location. We made it 2 days in advance for a Sunday at 1 sO we could watch them take out the food from the ground traditional Mayan style!! Amazing place and amazing food!!
