I have very little else to say when I am eating the food.
I think I was transported to another level of bliss.
How will I EVER eat any other tacos in the world and feel this satiated and heavenly?
The best advice I can give you is that you try this place as one of the first stops in Playa - so that you can enjoy this place as much as possible before you leave.
We came up because I had said "let's do this place before we leave it to the end and then regret it deeply"... and now we're kicking ourselves we didn't come earlier.
Clearly a favorite for the tourists and locals and it very clear why.
This temple known as La Birria is a swift 11 min walk from the beach to the main road directly up calle 38.
Small in size and easy to miss the drifting smoke from the grill and aroma is sure to stop you in your tracks.
With about 10 tables from the front to the back the limited menu offers a finite set of choices - but the flavor profile is so expansive with the salsas and additions up for consumption on the table.
What were the salsas and additions you ask?
Freshly cut limes (sooo complimentary to any taco)
Pickled red onion (sweet vinegar profile and offer a sweet crunch)
Chilli infused oil (spicy fire)
Crushed habanero salsa (spicy/hot)
Avocado salsa - light green (no spice/heat)
Bean salsa - light peach/brown (no spice/heat)
Salsa picante - light brown with black flecks (spicy/hot)
Our host who speaks not a word of English did her best to help but we used yelp to direct the order.
She was polite, patient and accommodating whilst we ordered our drinks and then asked for "uno momento por favor" (a moment please)
Once we figured we were ready she was quick to come by.
We ordered two tacos dorade, two tacos suaves and the consume con carne (with meat) (not sure if it comes with extra meat or not).
Even on a piping hot and humid day please order the consume. You can thank me later.
Within minutes our food arrived.
A colorful array of food that requires no filter, editing or embellishment.
The aroma was as delectable as the visual.
I grabbed the open face corn taco with slightly crisped edges (taco suaves) and spooned the avocado and bean salsa on top with picked onions and squeezed the fresh lime...

What is this flavor burst?
Melting in my mouth, I cherished each bite as the meat melted into my mouth while my friend bit into the taco dorade and I watched her body language confirm what I had assumed was happening - she was in heaven too.
I opened my taco dorade like I was gently peeling it open like an oyster to add salsas and additions - the crispy crunch confirming that this masterpiece was going to add an extra level of texture to the profile. With the addition of melted cheese I added salsas and additions.
Hold. The. Door!
As I bit down into the taco, holding it sideways to capture all the sauces and flavors pouring out from the taco vessel - my tastebuds fired off like firecrackers on New Year's Eve.
Savoring each bite slowly and tasting the flavor profile shifting and growing in my mouth.
How could a taco be so tasty in such a compact form? Well, it can.
Taking a spoon from the bucket in the middle of the table, I dove into the consume to feel it's texture and inspect the ingredients inside before placing it to my lips.
Served with 8 lightly fried and crisped corn tortillas - I knew I wanted to just taste the soup on its own in all its own glory.
I love piping hot food so I knew the steam on the top was indicating it was ready for me.
Filled with onion, cilantro, pork, chickpeas and surrounded by an aromatic broth I took a spoonful to my lips.
Stop! The! Madness!
There are no words for this buttery consume clearly made with heart and soul.
No tortillas needed. Nothing is quite as epic as a this broth, bourgeoning with rich flavors.
My tongue was dancing on air, my belly full and my heart content with the joy of a traditional and classic Mexican cuisine that blew my mind.
After 2 more 5 tacos dorade (because we needed another hit), the only right thing to do was to finish off with their in-house flan.
Bordering on the taste of coffee from the toffee, this delicate flan was perfectly confectioned (not sure if that's a word but it is now). Not too much sugar, but sweet enough to enjoy the creamy textures that dissolved in your mouth with each bite.
It finished off the event with a tight close like a sweet encore after a great concert.
To top that off, the prices were well beyond cheap for the area.
We spent MXN$385 and that included 4 sodas, 6 tacos, consume and a flan.
We left a hefty tip because we were so thrilled (obviously not necessary but a 10% tip is always welcomed)
... so... Take. My. Money!
I am going back every day that I can before I leave and I will be retuning as soon as I get back to playa.
