In chiropractors I look for: personalization to my specific issues, thorough diagnosis, layman explanations of what they think the problem is, someone who is willing to work with me on specifics that I want addressed (rack and crack if I want it), and above all a chiropractor who's goal is to get you better and get you out the door instead of trying to suck you into endless visits (like so many do).
