Let me start by saying I'm not your typical client that would have sought out the services of someone like Jessica. For most of the year I go to the gym and I eat high protein, low"ish" carb diet consuming as many RTD (ready to drink) whey protein drinks I could. I own a small computer company and I have a pretty unhealthy side business where I spend each of my weekends during football season going to every Giants, Jets Rutgers, Philly Soul and Trenton Freedom football games and we tailgate. Not your everyday ordinary gathering of a few friends kind of a tailgate. I mean TAILGATE. We prepare for months in advance our Sunday feast which includes various meats, cheeses, sauces, burgers dogs salads, mac and cheese, pasta, shrimp, dips, desserts and any form of deep fried delectable's you can imagine - for up to 200 people each week, not to mention lots and lots of beer.
To me Tempeh was a city in Arizona and MOTHER was well, my mother. The thought of eating anything other than a protein enriched meat, potatoes and vegetables diet never crossed my mind.
Timing is everything. Along came Jessica to one of our many local neighborhood get togethers talking about her "4 Weeks to Wellness" program which just so happened to start the day after this year's Super Bowl. At the end of each football season I always "go back on the wagon" as I call it, and try to get healthy so I can do it all over again come the fall. Not knowing what I was getting into I would try her class as she is a "health" coach, and heck, it couldn't hurt. What started out as a quick kick start with no real expectations turned into a major lifestyle change for me.
From the first minute of her class I was intrigued. I laugh as I say she gives a visual as only she can of what it is that she is explaining. During each of her four classes she shows just how easy and delicious a plant based diet can be, and better yet, we got to sample her themed meals as she prepared them in front of us. By the end of the first class, I was more than convinced and happy to say I have been for the most part about 98% dairy free since.
I believe that if there is any sort of a fountain of youth out there, Jessica is on to it and has no problems sharing her secret of how to find it. She has been extremely helpful and insightful and I am sure she is regretting the day I got her cell # as I have constant questions from what to make or what to add to a recipe or even what kind of kitchen gear to buy. I text or email questions to her often, and she always answers promptly. She doesn't preach, she explains(except for this one time my little 2 cup food processor died and I figured I'd step up to a big boy 4 or 6 cup and she demanded I get the big daddy 14 cup or she wouldn't let me live it down - I took her advice as I always do and I am very happy I did). She is sincere in her beliefs, a wealth of information and in my opinion a very positive person.
Getting back to the "going dairy free", I would like to share what I've noticed and never expected since taking her class 60 days ago.
*Started at 222lbs - today 202lbs
*Blood tests compared to last years tests & both my cholesterol and blood sugar levels dropped significantly
*I haven't had a RTD protein drink. I now make my own protein bars, and drink a plant based protein shake if needed
*I have changed ALL of my shopping and eating habits while & try to introduce healthier options to my family
*I no longer wake up each morning stuffed up
*I've always had a pretty dry scalp and it's gone
*My personal fitness trainer tells me my workouts are more intense
*I wake up before my alarm clock ready to go
*I have smoother skin
*My muscles are not as stiff
Two more totally unexpected, no explanation, hard to explain and extremely welcomed side effects
*I have always had what some say is a small skin cancer sun patch on my left cheek. I had it "burned" off by a dermatologist 7 years ago only to return a year later. I am happy to say that it is hardly noticeable anymore
*I have allergic reactions to something in red sauce, or some sort of spice that makes me break out in hives. If I don't take a Benadryl fast I breakout into cold sweats and can't seem to regulate my body temp and I either shake because I am so cold, or sweat, all the while the hives getting bigger. I went to an allergist and after lengthy tests they couldn't figure out what it is. It would NEVER just go away without allergy medicine. A few days ago I had an allergic reaction to something & I broke out in hives. I was unable to take a Benadryl so I drank a bottle of water as fast as I could. It got worse and then a few minutes later I could feel it subsiding and it just went away WITHOUT medicine for the first time EVER
