If you happen to be in the area I highly recommend checking this place out. The dinner fills up quickly and it may not hurt to make a reservation. However, they are very accommodating if you don't have a reservation, only downside is you may have to be out by a certain time to free up a reserved table. Parking in the area is extremely limited. Two men rolled out the dough and added the toppings. A third was the master of the pizza peel (or paddle) and the oven. The dough is incredibly light and elastic. Generous pinches of flour are dusted on the working surface and the pizza peel to keep things from sticking. The toppings are fresh. The cheese is usually a creamy fior di latte rather than the heavier mozzarella. The wood fired oven is very hot with pizzas baking in only a few minutes. Some toppings like fresh basil are added after cooking. All pizzas are drizzled with olive oil before being served. The end result is an incredible crust and a more delicate taste than any pizza I've had before. Prices range from €5-€10, with most around €8.
