Momma made it lovingly in the kitchen and her son served us. The local meats and handmade pasta was unbelievably good. They had pitchers of wonderful local wine that were bottomless. I knew we were in a good restaurant when all of a sudden it filled with about 20-30 men. They must have been some kind of club or guild. They were loud and happy and it was wonderful to share the restaurant with them. We felt like locals and like we were really part of the culture in the Umbrian hills. The drive is a little hard to find in the dark, but it's worth it! Don't pass it by!

I got the truffle pizza. It was a white pizza, with a thin, yet flaky, chewy, crispy crust. Yes, it is possible for an entity to possess all of those qualities simultaneously. Who knew? But seriously, this pizza crust was the best crust I have ever had. Truffles here are cheap and delicious. The pizza was slathered with them, in a lovely olive oil that was perfectly seasoned. The cheese was gooey but not ridiculous. It was really fabulous, The house wine had fizz to it, which was a lovely treat. Ambiance was great; we chose to sit at an enclosed patio. The place was hopping, but our food came quickly. Our server was such a dear and was all smiles. I absolutely loved this place. When we had called ahead to make a reservation, we mentioned that I have celiacs and were curious about what the gluten free options were and by the time we arrived for dinner, the owner's wife had made homemade gluten free pasta special for me! Completely blown away. As usual, the food was incredible, as were the truffles. Musts from Re Tartu are fondue with truffles and the scrambled eggs with truffles... The food is so rustic and flavorful, the service is wonderful, and the chef is congenial and always very helpful. I personally LOVE sitting outside, but my one complaint with that: smokers. I know, it's Europe. But it can really ruin your appetite, and tastebuds. Otherwise, I just adore this place. Last meal I had there a few days ago was Pici, of course, and Rooster. The Pici was light and sweet with sun ripened tomatoes, and the grilled Rooster and Fennel was delightful. Please visit this hide away on the hill. Then walk over to the Bar at the fork in the road and have some Alpine Erbolaria Grappa.
