I have had the opportunity to eat at several of the highly-rated restaurants here in Mexico City. First, the service here is impeccable: the right amount of hover where you do not feel that you are being watched by vultures; where your plate is removed at either your request or until each person is completed with their portion of the meal, and where you can set the pace of the meal at your direction. Second, the recommendations by the staff and the sommelier were accurate and rewarding. Our request for a sauvignon blanc from the friuli region was replaced by a recently obtained wine that was a perfect complement to our meal (wine deliveries are challenged by the heat of summer and they were expecting additional deliveries soon). The wines are only from Italy. The wait staff suggested that we have a simple pasta dish with the shaved truffle (in our case, the less expensive black truffle) but had to replace with it with the risotto. I cannot express how good this tasted. Really, that wonderful... The maitre d' comes over to the table and shaves the truffle personally onto the plate. One of the specials for the day was the octopus (pulpo) that had its own preparation (hours apparently), then grilled and presented spectacularly as an appetizer. Wow! The main course was the local sea bass perfectly cooked served over a celery 'sauce'. Every request was met professionally; every pause respected.
