The soup I ordered was every bit as nuanced in flavor as I might have hoped for, and the ample bean sprouts and flaming hot chillis enhanced the experience. The custard apple smoothie I tried was substantial and delicious. I would have happily sampled the rest of their menu, which is notably thorough in the choices it offers and the tastes it caters to. They are happy, for example, to adjust up or down the levels of mock meats (never my favorite thing, though I tried them here) among other ingredients. The service was quite thorough and efficient for a modestly priced place, and they had a delicious array of vegan desserts. The main drawback would be (predictably) a heavy reliance on soy products. The location is in one of the sketchier neighborhoods I've seen in Australia, but I was quite happy to take the streetcar there. Notably, there is a second location elsewhere in the city, which I did not even figure out until after I'd finished with this one.

The beef broth was HANDS DOWN the most finest, clean-tasting, and flavorful beef broth that I have ever had. It was not oily and surprisingly had a lightness to it. No hoison sauce or sriracha needed to go into this broth. It was perfect the way it was. I also tried the Saigon sandwich, which came with housemade pate, wagyu beef, and eggs. The sandwich was delicious, flavorful, and hearty. Housemade pate truly makes a difference. I did not think a Vietnamese sandwich could've been enjoyed that much but this was an elevated version of your usual banh mi. The Vietnamese iced coffee was also delicious and almost finished immediately. I will definitely miss Ph Nom when I return home! I'm more interested in the food offerings they have at Emporium and it was Pho Nom that I was most keen to sample first, as it's been spoken and tweeted about for months now, with chef Jerry Mai even giving potential new customers a sample at some pop up Pho kitchens months ago at the National. I'm glad to say that it lived up to expectations, my Saigon Pho Bo broth rich with spices and flavour and three cuts of beef (rare, brisket and meatball) bobbing around amongst the rice noodles. We also sampled the rice paper rolls - the pork skewered and the lemongrass chicken got the thumbs up from the grown ups and the crispy pork got devoured by Miss 3 before she started in on the Pho. It was only the first week when we visited and it was clear that every store in Emporium was struggling a little with the onslaught of people while trying to bed down systems. The Pho Nom crew did a stellar job, pumping on the food quickly and maintaining a smile the whole time. The only downfall? With hardly any seating (something that seems to be apparent with all food vendors in the centre) it was tricky finding somewhere to sit. Once we did, we could feel the eyes of everyone around us as we ate our last mouthfuls. Apparently more seating has been ordered, which should hopefully create a little more calm. Hooray!

BUT Execution is much much much much better than at the standard collegiate vegetarian place. This is vegan eating done right! My lovely wife ate at this place several times, ate all over the menu and was generally ecstatic. I had just one meal one time.' I had Peking Duck Wrap with vegan duck and plain old onion rings. The onion rings were absolutely first rate. They were far far better than the onion rings I get in the bars, grills and burger joints I frequent at home. The duck wrap was positively huge and was wonderul eating. Chinese vegan duck is wonderful stuff anyway. The garnishings and sauces, along with the huge size off the whole production, made this a treat. Are the desserts wonderful? I wish I could tell you. After all those rings, and all that vegan duck with vegetables, I had turned into my suitcase. When I leave Melbourne tomorrow, My suitcases will be crammed as full as it is physically possible to cram a suitcase. And that super-stuffed condition is me right now after having come home from the Vegie Bar.

The laksa was OK -- a bit messy to eat if you can't find a seat and you have to stand around awkwardly holding the bowl in one hand and trying to navigate with your chopsticks/spoon in the other. (I'm bad with chopsticks anyway and nearly stabbed myself in the eye at one point.) This food stall is located next to the Sri Lankan food stall, away from the main row of food stalls, so you kinda have to hunt for it. It's further south than the main row of food stalls, if that makes sense -- kind of in the middle of the building, with more of the non-food stuff. On the plus side, that means the queue is much shorter than at other food stalls!
