When our date got closer, Jeff sent over the final weight for our share, and it caught me off guard because it was so much bigger than the past shares we've gotten through other local farms. As it turns out, there's a reason. When we picked up our meat, we found Jeff excited to share how he raises and feeds his cows and why, ultimately, his meat is far superior. (He didn't say as much, but as you can see by the photo, it's incredibly clear that there's no comparison.) We learned more about the care and feeding of cows that afternoon than we thought possible but we loved every minute. He was also great with our kids, taking them to see and pet his horses. Afterwards, he even called me to share his favorite recipe for flanken ribs. But how does it TASTE, you ask? As a reformed 25+ year vegetarian, I can't stand the smell of most grassfed beef that has come into this house. (We've done multiple cow shares before through other ranches, all the same - the smell is nauseating.) Bar 3 Ranch, though... totally different. There is NO gamey smell, no gamey taste and my husband gives me the side eye now because he has to share his steaks with me. It's GOOD. Like, REALLY GOOD. Words are probably not going to do this justice, so I'm attaching a photo of the difference between Jeff's meat and our last half cow from another/local ranch. There is just no comparison.

I strolled around the limited groceries and they had the basics. Then I wandered back toward the meat counter. Dividing the two sections I found precut meats. This is when I decided to do my test on chicken breasts. Couldn't find the full breasts so I went with smaller cut pieces. Just an FYI, you can request any cuts of meats at the counter. This business is definitely both. They have a plethora of Texas cuts of meat sourced from Texas ranches, They have both pre-packaged and counter-fresh. On the flip side, they also have an abundance of fajitas, chorizo, al pastor, and other Mexican meats, typically found at traditional taquerias. We bought their in-house recipe chorizo and a bacon-wrapped chicken breast stuffed with jalapeños and pepper Jack cheese. We haven't cooked the chicken yet but I hope it's as spicy as it sounds. The butcher is in Monday - Friday but they're open 7 days a week. If you don't live in town but want to call ahead, they'll have you're order ready when you arrive. This is perfect for all the hunters that visit San Saba from October - January. They also have a small selection of Mexican brand groceries that are not available at the local grocery store. This is a great business addition for San Saba. They are conveniently located about 1 mile west of downtown on Hwy 190. Bottom line - A great combination of an American and Mexican Butcher shop.
