Every time I'm rolling through Slinger on 45, I must stop! Held's is a local gem and the place to go for amazing sausage and cured items. The shop is always clean and smells like the smoker. Stopped on Tuesday was nothing there. Looks like there closing. Nothing on the shelves and very little meat to choose from. Picked up some spicy jersey there wasn't any spice at all. It wasn't dry,you could have put it on some bread and had a beef sandwich. Couldn't see paying 20.00 + for lunch meat. I have always stopped there for over 15 yrs. Not anymore. My colleague has been coming here for years and thought I would like it. He was right! I brought the jerky, sausages, and beacon. What I really wanted to buy is their cheese, especially the aged cheddar. I mean we are in Wisconsin. But since I was traveling, that's not possible. For the small shop they do have a lot of meat and cheese selections. They also sell local ancient artifacts like, rock arrows. BACON. Held's butcher shop is so easy to find, it's exactly at the exit for Slinger! It's the exit just north of the Slinger International Raceway and Little Switzerland Ski Resort. You can see this bacon Mecca from the highway...and once you pull into the parking lot, the smoked meat aroma is pervasive and draws you in! BAAAAACON. Open the door and you are overwhelmed, in a good way, by the aroma, and as well visually by the case of fresh steaks, sausages, bacon, etc. bacon bacon bacon baaaaaconnnn Turn to the right and you'll see more Meats, as well as a wonderful, Wisconsin cheese cooler, and turn back door the front door and there's a corner of touristy knicknacks. Baaaaaa...coonnn Turn to the left, toward the larger area of the butcher shop, and there are more Wisconsin-made products, touristy items, and more coolers of cheeses, Etc. Bacon? However, let's focus on why we're here: HELD'S MEAT... ...AND BACON! The gentlemen at the counter are absolutely professional and friendly, have a little bit of wit and a lot of expertise in their field. Behind them, through the windows, you can see the butchers in the back doing the meat voodoo that they do so well, such as... ...Bacon! Atop the main cooler hang spicy and regular landjaeger which are both to die for. There's only one other brand in the state of Wisconsin which I prefer more. And next to these fantastic landjaeger are bags and bags and pounds and pounds of a variety of the best beef jerky you'll ever eat. If you get the more moist varieties, they are thick-cut, like the ends of brisket, with the spices clinging to the chunks like on a piece of pastrami. The Carolina Reaper and ghost pepper varieties are thinner and more dry but they are still outstanding and head and shoulders above the grocery store brands. If I recall correctly, there is no MSG in any of their products, and the most minimal amount of ingredients, making all of the landjaeger and beef jerky not only more delicious but healthier or less bad for you. :-) on top of that, the prices for this incredibly high quality product the prices for this incredibly high quality product are much lower than you'll pay per ounce at a gas station or grocery store for the average mass-produced brand. Bacon? Now, let's take a look inside the main cooler! !nocaB Held's features a variety of handmade, all natural, plump and juicy, and Incredibly delicious when cooked, wursts. You won't be able to just take home the black forest or the onion flavor, you'll have to take a few different options to grill or boil at home. I believe I have taken home three or four different varieties and all were equally interesting, exciting and flavorful. Again, the quality and price are far better than you'll find on any typical big box retail store brand. I've saved the best for last: BACON! YOU DON'T EVEN NEED TO READ THE REST OF THIS PARAGRAPH...JUST ASK FOR FOUR POUNDS (I believe they'll give you a free bag of beef jerky at 4lbs) OF THE WORLD'S GREATEST BACON!!!! Okay, now that I got you hooked, seriously, this is the world's greatest bacon ever. It's mega-thick-cut, a perfect ratio of meat to fat and Incredibly high quality pork, smoked to the absolute perfect amount and if they add anything else to it then whatever else they add is perfect also, not much sodium, no unnecessary ingredients, and this cooks up so well in your kitchen. That was a really long sentence, but it's so worth it, because once you start eating this bacon your stream-of-conscious will just start running and you'll have to find some sort of willpower to cut yourself off from throwing a few more slices on to the griddle. Ladies, you need to know that Held's has the BIGGEST sausages I've ever seen. They've got it going on in both the length and girth department so buckle up. Seriously, Held's is a great stop for cheese, cheese spreads, homemade beef sticks, homemade landjaeger, beef jerky, seriously giant salamis and so much more. They even have some antiques/rocks/minerals for sale alongside shelves full of candy, preserves and Amish fudge. In short, it's a super weird mix of things that's wonderfully Wisconsin. Staff is really nice and there's always a crowd. For good reason - they really do make a good product. If your local grocer isn't giving you what you need in the sausage department, make the short drive up here to get all your meat stick desires satisfied. read more

As a 30 year+ veg head, it IS kind of odd that I am writing a 5 star review for a primarily smoked meat business. Back in the day when I was forced to eat meat products, I LOVED Held's Beef Jerky more than anything and the homemade sausages were to die for! Whenever I give a gift of a big bag of jerky to someone, I inevitably get a call a couple of weeks later for more!!! Sausages and brats are ALWAYS a hit at BBQ's! Held's also has a terrific selection of homemade seasonings to real take your grilling over the top! My guy particularly likes the prime rib rub to take his burgers to the next level but you are sure to find any number of blends to expertly tweak your creations. Obviously, Held's is known for their meats but they have a fairly extensive amount of cheeses and cheese spreads at some of the best prices I have found throughout the state of Wisconsin and believe me, I go on several "cheese Pilgrimages" every year! Everything is always super fresh and delicious, staff is friendly and beyond helpful, great selection of products representing Wisconsin, and it's definitely easy on/easy off freeway. I have not been here since the mid 2000's but not much changes if I remember correctly. A great assortment of in house made sausages, brats and jerky. Cheeses are from the local area or from communities around Wisconsin. Also you can find a nice assortment of syrups, olives and jellies that should appease most customer's appetites. I remember back in the day it used to be Held's cheese shop, but now they focus on sausages, and their plump brats are some of the biggest that I have seen in awhile. I've been introduced to this market by a co-worker who had frequented this market for over 30 years and often praises their products and customer service. I finally had a chance to experience it for myself and I was blown away by the kindness and customer service of the family working behind the counter. That kindness is exhibited with their patrons as well. I went there on a busy day and there was not a grumpy person in the building, customer or otherwise. I have a pretty fantastic selection of smoked meats. I had purchase cheese salami there homemade beef sticks and even got this gutsy to try head cheese. Everything I purchased was amazingly delicious Yes even the head cheese which I was afraid to try because I've always heard it was disgusting. Oh contrary! It's a small quaint very clean atmosphere and the staff is incredibly knowledgeable. There needs are so fresh that they will tell you right away that they should be consumed within a couple of days because of the lack of preservatives and artificial fillers. Although I live 45 mi away, I don't mind taking the trip for Held's. This place is worth it. Next purchase... Their coveted Bacon ! read more

I hand the most fantastic jalapeño beef sticks as an Xmas gift and I said one day I would stop over and get some more. So I drove over one Sunday, don't do that people because there closed on Sunday's. There is a giant rat standing in front of a huge mouse trap as you drive in to greet you. As you walk in the vestibule is filled with antiques for sale which was odd and then you smell smoke people, when you smell smoke you know it's going to bee good. I didn't know what to expect from a beef stick place but it was very cool with all kinds of smoked meats and sausage in old school meat cases. There was spices, jars of vegetables, jars of pie filling, flavored popcorn etc. When I finally got my turn ant the counter I asked for the jalapeño beef sticks and what a bummer because the guy says he thinks they just sold out and they were so I said just give me the most popular one that you sell. When I got home and opened the bag the smell of smoke hit me again and the package was not even opened yet. The regular beef sticks were very good with a nice smoke flavor. You can tell that this is a good quality beef stick because it's on the lean side and seasoned with a little pepper flavor. read more

I seriously love this place and stop every time I end up driving past. If you get one thing, get a pound of bacon. You will not be disappointed. Other things to love from here is the jerky selection, the brat selection, and the assorted meats and sausages. My personal favorites are the philly cheesesteak brats and the mushroom and swiss brats, but some brat types are seasonal. The only thing keeping me from giving the last star is the price points on their products, but that doesn't keep me from buying them. read more

They also have a legit selection of local cheeses, all of which are available either bulk or prepackaged. Enter at a busy time and this place is a bit of a shit-show. Fortunately, the fine folks behind the counter have everything under control. Customers tend to be a bit "deer in the headlights". Most of what we have purchased here over the years have been great. Recently, I purchased some landjeager and smoked butt that were both a bit on the dry side, but tasted fine otherwise. I love the traditional meat-market vibe here. Small town butcher with big time flavor. We've strictly purchased various kinds of jerky, snack sticks, and bratwurst. The double smoked salami as far as I know doesn't exist anywhere but here. It's delicious. Our favorite jerky is the Hot Jamaican style. Others are decent but we prefer that kind. Ariosto snack sticks are fantastic. We've been told to try a couple other things and plan on doing so another trip north to Green Lake. read more

I have childhood memories of visits to the smokey palace that is Held Meat Products. It brings back memories of ice fishing, boating trips, camping and vacation. Those memories come flooding back every time I walk through the door and the smell hits me. Although the building is larger and a bit further down the path, it is still worth the drive every time. Hands down, this is my favorite jerky emporium in the state. They cure the slab and slice into tender, steaky strips. The spicy and black pepper are my personal favorites, but they have mild and sweet if that is more your jam. I've been known to travel to certain butcher shops when craving a particular flavor of bratwurst. When looking for an Onion Brat, this is the spot. Whether I get any other flavor (and I usually do), onion is a must have. During the winter, they sell Ambrosia, or Fairy Food. String cheese whips, pickled green beans and Landjaegers are other "accessories" to contemplate while there. Don't forget to check out the antiques, fossils and other gifts around the shop. To do, I've avoided impulse buying a beautiful chunk of meteorite and/or dinosaur bone. Make yourself a meat memory and visit Held's today. Your tastebuds will thank you. read more

This is truly Heaven on Earth! No joke! My family has been coming to Held's since it was in the side of a turn around on the highway. As soon as you exit your car, you can smell the deliciousness! They have all kinds of smoked meats and cheeses! My favorite is the garlic summer sausage and the fresh liver sausage. Bacon, smoked butt, jersey, smoked sticks... The list goes on and on and on. Every time I walk in there I am greeted, "Hi Becky. How's your mom?" This is one of those family business that has done it right. I travel from the north suburbs Chicago to go here! I was here for the first time with a friend and it was great. The entryway had antiques for sale and as you continue inside, you see the great variety of foodstuff for sale. The meat variety is immense and you can get anything you need or could ever want. They have cheese too and they will slice to order. The staff is courteous and friendly and efficient. It's not just a place you go to buy meat, it's an experience that you'll want to have over and over. I'm still eating the bacon, thick cut with just the right combination of smoky and salty flavors. This place is friggin awesome! Seriously I've never smelt a building smell so delicious. It gets very busy but its worth the wait in line. We got snack sticks (I finished a pack on my own in 2 days, would have been faster but I tried to practice restraint), cheese, salami, BBQ sauce, seasoning and a few other snacks. The BBQ sauce was delicious on the smoked ribs I made, I recommend using thier rub and mixing both the sweet BBQ sauce and smokey BBQ sauce. It was a hit with everyone. I would make the drive again for the snack sticks alone! read more
