The owner is also familiar with US cuts of meat and what he doesn't know, he's willing to find out. I order my Thanksgiving turkey from him every year, too! We are from San Francisco where there is great seafood and we are picky; this was one of our best dinners in a 3 week trip in Europe and definitely the best seafood.
