They combine all-you-can-eat style with a diverse menu, small portions so it's difficult to over-order, and of course low prices. You fill out a form indicating what number of what dishes you'd like, hand it to a member of the waitstaff, and they bring your order out to your table. You repeat until you're done or until the time limit is up (I think around two hours). Waitstaff is prompt and friendly! Very eager to accommodate! Dinner service is slightly more expensive, but has more options. To think of this as only a sushi restaurant is definitely a mistake. They have so many options (the octopus balls, all of their tempura, grilled squid, duck, frog legs, and marinated tofu are all big favorites of mine).
