We arrived early on a weeknight (19h) and had him to ourselves for the first two hours; he was a delightful narrator of his sources and techniques, a top notch sommelier, and did I mention the food? We loved his maize cake with sardine, the tomato and pickled salmon on pea shoots, potato and cod mash with hard Sicilian cheese, raw prawn with baby artichoke, marinated raw tuna with truffle, clam and potato soup, home-made ham board, grilled vegetable stacks, tempura vegetables, home-made mozzarella, garlicky escargot on Parmesan polenta, ravioli stuffed with lobster and tossed with tiny scallop and shrimp, sweet ginger cake with white brandy cream, and panettone with a golden dipping sauce.
