We love discovering new places to us. After a great weekend in Fredericksburg, we find the Barrel House. The southern cuisine on the sign sold it even before we sat down. I'm a big fan of Cajun and creole cooking. We started with the fried boudin balls and gator bites, both were excellent fried to perfection with just a hint spicy bite. I had the chicken fried steak with eggs and hash browns. Steak was tender enough to cut with a fork, and was on point. Cynthia had the breakfast burger which she said was cooked to perfection as well as crispy along the edges. A great meal along with great service which allowed us to get back on the road and headed home with full stomachs. A full stomach and a Dateline podcast made those three hours a little more bearable

When we came in the woman who seated us tried to walk us through what was and wasn't available that day which was poorly presented and left us a bit confused. Asked our server and her description was hard to follow as well. Put in our order and the chips and queso were great. Fish tacos were good as was chicken fried steak and tender plate. My eggs were over cooked and my steak way undercooked for medium rare. Flavor on the steak was great though. Spent most of the meal wishing the server would bring more water. Certain this place can be better than our experience but this time was more off than on.

You get to Tumlinson's before you reach the much more popular and more crowded Cooper's in town. Arrived around 1:30 on Saturday and there was only one car in the parking lot. No one else in the restaurant but no matter, the food is incredible! I don't believe there is something as the "best" barbecue. I think that there is a sort of supreme level that has a great smoke ring, a great bark, quality meat and basically melts in your mouth. So tender you can break it up with a fork but I might use a knife so I can create smaller pieces. THIS PLACE IS ALL OF THAT with perfect rendering and a master class in what a brisket should be. 5 out of 5. As good as any I have ever had and what I expect as the top of what barbecue brisket can be. The ribs were cooked perfectly with bountiful meat on the bone. The rub was not noteworthy but they were tasty and led me to use the sauce. The sauce is excellent - thick and vinegarry with a hint of sweetness. Only ordered one side - the potato salad. Much better than most. Not what I would put in the best category but totally worth eating. The pickles and onions? Wow! I wouldn't bother mentioning unless they were amazing. (Or terrible.) These were amazing! What I loved was that they cut up the onions in chunks rather than slices. The pickles were chunks of whole dills and not canned sliced pickles. Finally, I'll get to the ambiance. It's spacious with lots of seating inside. Good a/c. Two small windows that look out across the beautiful Hill Country for miles. Since the wildflowers were in epic form on the drive, the view was amazing this day. But it would be excellent without them. I should have taken a picture but I was too busy eating. We left Tumlinson's SmokyTop and went to Cooper's and as a comparison, I give the edge to Tumlinson's. The briskets were both in the same top echelon of what I expect a smoked brisket to be, but I think Tumlinson's was just slightly better. But where Tumlinson's crushes Cooper's is in the ambiance/atmosphere. Cooper's seating is indoor with no real outdoor tables. So you eat in a confined, windowless room that is not inviting. No music playing. Tumlinson's with no one else in it was memorable. I couldn't wait to get out of Cooper's. Felt a little creepy. Finally, Tumlinson's was selling brisket at $24 per pound while Cooper's was $26.99. This part is insignificant to me for the most part but there is a real price difference. Final verdict - Tumlinson's 5 out of 5. Cooper's 4.8 out of 5.
