Best pizza place in town is in a gas station?!?…read more We got the taco pizza, and I was saddened to see it topped with Doritos. After scraping off the junk food, I continued to be unimpressed with the pizza. It just didn't taste like a taco. We also got pepperoni and beef pizzas. This made up for the taco quickly. Both pizzas were tasty. They could stand to cook the crust a wee bit longer, but otherwise it's ok Not sure if this is the best in town but natives claim it is. It's sad. Someone needs to open up a real Italian or Greek pizza shop in Plattsmouth.

In bread making, you're supposed to proof the dough for awhile before cooking it. With pizza dough,…read moreyou're technically supposed to proof BETWEEN 24 - 48 hours. Some places proof their dough for a minimum of 48 hours. I've caught people pressing into the proofed dough for fun, not realizing this causes the gases inside the bread to rush out. Basically by precompressing the dough, it becomes hard to work with later on, and the dough is less poofy. This is why in bread making, it is important to keep the risen bread risen and not compressed again. Some breads require you to knead again into proofed dough, but it is always risen before baking. I'm just saying this because I feel like it should have been common sense, not to hasten the dough process. The dough can be literally the deal breaker for most pizza out there. In my opinion, the dough tastes as if it is not done proofing, and/or they killed the yeast when preparing the dough. You can do this by heating the water past 110F and then mixing with the dough mix. I know for a fact Casey's tells employees to temp it to 105F, and yeast actually is a very hardy organism that can remain dormant in cold temperatures whilst also being able to become active between temperatures of 40F degrees to 115F degrees. If the dough has an estery taste, it means it was mixed too hot. If it has a sweet taste, then it is not done proofing. If it has an alcoholic taste, then it's too cold. Yes I used to work there, yes I used to tell them these same things, No, they did not care to listen to me, in fact I am pretty sure I was seen as a nerd. I just really like making bread, and I was just doing my job.

The food was scrumptious, satiating and satisfying! The sandwich was amazing, side of chips to top…read moreit off nicely. And the desserts... yeah, we may have gotten a little carried away. The crème brûlée with pistachio was honestly a great way to finish the meal. Prices were pretty reasonable for the amount of food you get, and everything came out quickly enough that we weren't sitting around wondering if our order had been forgotten. Overall a really solid spot for a group dinner. Good food, good portions, decent prices, and fast service. Come hungry your future self will thank you.

Guys. This isn't normal pizza. I've never had pizza crust that tasted as good as the crust…read morehere. Chef Tim said it took him four years to get it right. My response (for what it's worth) is that was time well spent. My husband and I ordered a Rustica and a pepperoni pizza. GUYS! The Pepperoni on the pizza is unlike any pepperoni I've ever had as well! We also ordered the Kale Caesar salad with REAL anchovy dressing. My chef husband said his impressions was centered around how good the diary products were. It's obvious they are gourmet. Another areas where I was happy was how the seasoning was on point! I can always tell a good chef is at the helm when I take my first bite and am greeted with FULL FLAVOR (which means they use salt!). Such good seasoning choices here. Needless to say I was so impressed. It's very much worth your effort and time to eat here. The service was very good, knowledgeable and kind. Chef Tim was out on the floor which was cool to see. He's got a great vibe to him. Caring (which does a long way in the services arena) and very knowledgeable. He's easy going and even tho' the place was crazy busy he was obviously in his element....relaxed. Cleaning tables. Interacting with guests. I love to see that. Makes the place feel cared for....and by proxy the guests. The wait staff were good at their jobs too. Working in the crazy with ease. A very well run place. Again, it's worth your time to go. Thankfully we don't live a long distance away from Dolomiti so we can order stuff to go. And on that note, It should be noted that the pizza was just as good (literally nothing was lost) the next morning when we ate the left overs for breakfast.
