This class was a birthday gift from my son, a thoughtful choice since we share a love of cooking--and it turned out to be one of the most memorable experiences I've ever had in a kitchen.
We prepared a spatchcock chicken, stuffed with pockets of fresh, homegrown herbs, and were gently guided through the process of creating a spring vegetable risotto using locally sourced ingredients. Although I spend a great deal of time cooking, David's depth of knowledge--shaped by years in professional kitchens across the world--made the experience feel entirely new and immersive.
What stood out most was his teaching style. Despite his impressive background, he was never intimidating--only patient, encouraging, and genuinely passionate about sharing what he knows.
After cooking everything to perfection over a wood fire, we sat down to enjoy the meal: the chicken and risotto accompanied by a kale Caesar salad, Steel Pioneer signature sourdough bread, homemade cultured butter, and an unforgettable yogurt panna cotta with strawberries, almond crumble, mint, and praline tuile. And I would be remiss not to mention David's peach kombucha--it was exceptional.
By the end of the evening, especially after spending time with his delightful wife Julie, we felt less like guests and more like family.
