Stroll into the Casa del Rector hotel and the concierge will radio up to check if there is room at the bar for you. Then walk through the hotel and take the elevator all the way up. We enjoyed our drinks and the lovely view. They have some semi-see-through sun screens/shields that cover half the bar for patrons who do not want the sun in their eyes; the staff raise these screens just before sunset. We enjoyed three drinks and an appetizer before leaving for dinner proper. The waitstaff were good. I actually want to give 4.5 stars because the calamari we had was laughably bad and the salad it came with was much better. Nonetheless the beautiful setting was one of the highlights of our trip so I will rank it as 5 - just don't get the calamari!!

The cocktail menu is not large, but the drinks are inventive and much more balanced (less syrupy sweet, nor shy on the liquor) compared to other places. Prices are a bit higher than most at 180 pesos per drink, but still very reasonable compared to US prices. The bartenders were so very attentive and made sure to get our second drink order as soon as the first was done. The only thing that was a little strange was that their menu QR code took us to their Instagram page. Me being a total dinosaur did not have an IG account and couldn't see the menu, but luckily hubby did. There is a host's stand at the Hotel Casa del Rector entrance to make sure that there is seating to accommodate your party before allowing you to go up. Our hostess did not tell us how to actually get to the rooftop, so we just walked up a couple flights and found ourselves in a completely empty but very pretty courtyard. We found more stairs up across the courtyard, even though it looked like it led to hotel guest rooms and private balconies, then eventually ended up at the top where the pool and bar were. Totally took my breath away at the complete transformation from the busy cobblestone street to panoramic views of the city. Only then did I see the glass elevator that would've taken us easily up here. However, the free self-guided tour of the hotel convinced me the next time I'm in Guanajuato, this is the place to stay in!

Cervezas, mango margaritas and tequila shots started us off after walking from the spectacular funicular and views of the city into the old city. We received a nice gratis plate of jicama and cucumbers with Chile and then we ordered a delicious and outrageously cheesy queso fundido with chips served with rojo and verde salsa. I ordered the tuna, avocado and mango ceviche which had an incredible amount of cubed tuna. It was not a light ceviche at all but had a nice smoky lime flavor to the fish on the crunchy large corn tortillas. There was so much fish and with the other appetizers I couldn't even finish it. This joint was a nice respite before heading over to the Casa de Diego Rivera.

Nice touch that guacamole is served with the fajitas (not so in the US!). They also serve cucumber slices with Tajin--nice alternative to chips and salsa. I'd return just for those two items on the menu without hesitation. We sat in the back room, which was kind of an eyesore because they had several plant pots with dead plants inside of them/or completely empty filled with dirt. It would really make their restaurant a whole lot better if they chose to do some interior design, for instance paint a big black mamba mural on the wall and some other type of artwork- their current art is extremely ugly and plain and reminds me nothing of black mambas. Their bathroom is incredibly small but is one of the top cleanest I've ever been in in all of Guanajuato. A couple days ago, I went there for an afternoon drink and the doors were completely open with several workers inside. They told us that they aren't open yet and to come back in 15 minutes. We walked around El Centro and came back in around 20 minutes. For whatever reason they weren't ready & told us to come back again in about 10 minutes. So after 10 minutes, we returned only for one of the bartenders to tell us five more minutes. It was so ridiculous and my mom & I were seriously getting a little hangry by then -especially being screwed around w what time they truly opened. Classic situation here lol. That whole situation was a big turn off for me & makes me not want to frequent this place again. We ended up going to another really cool bar up the street. Anyways: The servers were kind and accommodating. We ordered vegan dishes and of course they put cheese all over the dish after making it very clear we didn't eat cheese/cream/lactose etc. We sent it back without any issue and the check was very fair. A big plus is that they play super cool music. I think Tame Impala was the band of the day when we were there :)
