Mustafa (hopefully this is spelled correctly) was: kind, attentive, incredibly speedy, and inhumanly composed. An absolute delight to have as a server, and frankly while my review isn't particularly positive, I would have found the experience to be borderline 1 star just based on the actual flavors of the food relative to the pricing if not for him having saved the experience. If I could do this dinner again, I would honestly order less food, as you get the same view whether you order a single tasting menu and grab some takeout elsewhere afterwards, but at face value the flavors seemed bold yet feasible, as though they could turn out well depending on the execution. In reality we ended up spending approximately $1200HKD per person on a tasting menu that had one to two memorable items each. We actually spent an additional $98HKD on a dish that neither one of us felt compelled to finish. The second course tempura was more interesting flavor-wise than either of our mains, in part due to the chili infused tempura sauce doing a lot of heavy lifting. We are not generally fine dining individuals, it is an occasion we reserve for special events (this was our anniversary), but we do have enough experience to know that the execution of these dishes was miles away from a single Michelin star, yet commanded prices well above most of the one-star restaurants we've visited. The waiter took plenty of photos to commemorate the experience, and we managed to see both the 8PM "city of lights" show on the businesses spread along the harbor, as well as a fascinating lightning storm directly in front of us in a massive panoramic, which should lead to an unforgettable night, but the quality of the food left us grasping at straws to find silver linings. I wish I could remember this experience more fondly, but every time a family member asks whether we enjoyed the food, we struggle to muster any enthusiasm and at roughly $2,800HKD after 10% service charge I can't help but wish we had gone elsewhere to get better food and just visited some sort of observation deck instead.

That level of attentiveness and accountability is what excellent customer service looks like. Aqua is another rooftop bar overlooking the harbor with beautiful views of the city skyline and waterfront. The atmosphere is lively yet relaxed, making it a great spot to unwind, enjoy a cocktail, and take in the scenery. There was a DJ spinning throughout the evening, which kept the energy up and added to the overall vibe.

Kudos to Boris and Elle for their attentive service; they frequently checked in on us and ensured our comfort. First off it was kind of hiding inside a commercial building. It required an uphill climb before reaching there. If you are planning to take your elderly friends or parents, I strongly encouraged taking a taxi there. We were greeted by a friendly hostess as soon as we stepped out of the elevator. The whole place was elegant and tasteful arts were hanging on the walls throughout the whole dinning room. It was lavishly decorated. The staffs were attentive and friendly. However I found it funny that the majority of the staffs only spoke English. It was kind of ironic that we had to speak English in a Cantonese speaking island. Of course we had to order Caesar Salad and Spicy Rigatoni because they are the two popular dishes at Carbon. Caesar salad was made in front of you and the waiter told us he flown to their NYC location to master the skill of making this salad. I was ensured everything was as good as their NYC location. The salad was fresh and crunchy; it was a combination of Baby Romaine lettuce, garlicky croutons and shaved cheese tossed in a rich tangy creamy dressing. Every bite was covered with a right amount of freshly made flavorful dressing. The mouth watering Spicy Rigatoni was so irresistible. The creamy spicy tomato sauce blended beautifully with the pasta. It was so delicious and addictive. I would not leave Carbon without eating its Spicy Rigatoni. We also tried the Veal Parmesan but it was kind of a disappointment because the meat was too dry and tough. The saving grace was that it was still full of flavor. We did have a good dinning experience there. I think it is a good restaurant for a romantic dinner or special occasions. It was as pricy as their NYC location but the food wasn't as good though. The vodka sauce is nice and creamy and the pasta is cooked well and had a little bite to it. 2) Rib eye Diane - The rib eye is cooked and served in a really luscious mushroom sauce. The sauce really makes the dish. The steak itself was slightly a bit tough and had a few cuts with too much fat. However, I did really enjoy this dish. 3) Bananas a la rum- my favorite thing I had. Bananas are flambéd in a rum sauce and then poured over three scoops of ice cream and cake. Vanilla cookies are crumbled over the dessert to provide some texture and crunch for the dessert. This is really delicious and is a must order.

Things were sorted out and the restaurant was not close to being full, so I obtained a table indoors but right by the window. The view is quite nice. You have a pretty good view of the harbor though you have the ferry terminal partially blocking. Eh, nothing's perfect. The Sedanini was decent, with some savory umami elements, such as sea urchin. The pasta was actually a bit undercooked, but not terrible. The lump crab was fairly dominant in the dish and it was fine. There was a savory (maybe seafood?) broth flavor that permeated throughout. The Capricciosa pizza was not to my liking, even though the toppings seemed promising. Olives, artichokes, mushrooms, and ham is a good combination, but the crust was too soft. Additionally, given the potential moisture with all of the toppings, the pizza was pretty soggy. That was exacerbated by having too much tomato sauce and not enough cheese. For the most part, I didn't think there was much particular flavor with this one. Service, the front-of-house mess up notwithstanding, was actually good. The attentive server actually suggested the table adjacent to the one I was initially seated, because the view was nicer. That was a nice touch. The decor was fine, with a bit of an intimate setting that isn't dark like a cave. Prices here are fairly high, though I expected that from an Italian restaurant right by the water in HK. Come here for the view, but don't expect a lot.

So, what we ordered: I went for the chicken with cabbage and mushrooms and my friend got the pepperoni pizza. Both, just excellent. - I initially wanted to have their cod but wanted to change the potatoes for another veggie. The waiter said we could ask in the kitchen but that it was going to change the whole taste of the dish and it may not be worth it. Oh well, chicken it was. The dish was really tasty, huge portion, and with a yummy sauce (I would have enjoyed a bit more of the mushroom because I barely saw a few...). The service was also really good, from the staff at the entrance to the waiter who served our table. So, I'm definitely recommending this place: good food, better views, quick and efficient service...the only let down might be the price. Once you look away from pizzas and pastas it gets a little pricey.
