Axis began carrying little two-bite cakes from Ahimsa (a local company), and everyone seemed to love them (read: they were so popular that Axis frequently ran out!). When I finally got to try one, I believe it was chocolate-peanut butter. And: IT. WAS. DELICIOUS. Unlike so many other vegan baked goods I had tried, it wasn't cardboard-y in either taste or texture; it was perfectly moist, unbelievably flavorful, and melt-in-your-mouth good. I had never thought something vegan could taste so sinfully delicious (Ahimsa is super proud of the fact that 90% of their returning customers aren't veg or veeg)! Since then, I had the privilege of working with Kristi (the baker and artist) on a project for my blog. She made me a beautiful german chocolate cake with the most delectable coconutty, bourbon-vanillay frosting I've ever had in my life (thinking about it now is making me drool a little... I could have probably eaten the stuff straight outta the container with a spoon). I didn't share a single bite, and to this day, I don't regret that decision at all! If you're searching for all-natural, organic, from-scratch cakes or cupcakes... look no further! If you're in need of an Ace of Cakes-style 3D-sculpted style cake... your search is over. Ahimsa (which means non-violence towards all living things) is absolutely the place for you. Do know: everything is made to order and you'll need to make an appointment, because Kristi works out of her state-licensed and inspected home kitchen (and just showing up at her house would be wildly rude and uncool!). My first opportunity was my SO had actually ordered a green tea cake -- it was so good I couldn't stop shoveling the buttercream into my mouth. This year I opted for a Boston cream pic cupcake selection for the Boston cream pie lover in my life. The inside was a yellow cake base with the standard Boston cream in the middle and a hardened chocolate shell over cream on top. I made a special request for some lettering and they came packaged in a box that allowed for complete stability of the cakes. I accidentally left them out in a cold area prior to serving but they turned out totally fine! I would have normally done a regular Boston cream pie but circumstances made cupcakes an easier option. Will be trying the full cake next time. Definitely recommend if you're in the area -- ordering, customizing, payment, and pick up were all insanely easy.

As we sat having our halfway-between-breakfast-and-lunch-but-not-really-brunch snack there was a steady stream of customers, I'm guessing about 50/50 regulars and cruisers. Aside from pastries, coffees and teas, there's a cooler with canned/bottle beverages for the on-the-go beverage drinker. With as much activity as was going on during our visit you'd think it'd be difficult to keep clean, but there was a gentleman who came out frequently to take care of emptied tables, trash, etc. There are windows into the baking area, proving that they've got nothing to hide.
