My wife and I recently bought a house around the block and after seeing that Loza had opened, I had to stop by. A tall man who goes by "Me" introduced himself as the husband of the owner. He said his wife had recently taken ownership and cooked amazing food. We had a great chat and I learned that Me was a photographer and had a studio in Springfield mall. The interior of Loza's Market consists of a small but well-stocked shop with a clean, stainless steel kitchen in the back. One small table sits by the front door. As I was leaving, I spied some savoury pastry-looking things in a glass warmer and asked him about them. He said they were "sambusas" and he graciously gave me 2 as a congratulations on our newborn I took them home and my wife and I were in love. Yes, with each other but also these sambusas. So crunchy and savory with a hint of spice. They were filled with a variety of things but we definitely noticed the lentils. Finally, almost a week later, I decided we had to order some food. My previous experiences with a couple of Ethiopian restaurants in CA and NYC were that the food was mostly cooked down stews with minimal texture. However, looking at Loza's new menu, I noticed a selection of beef options that were stir fried. My wife ordered the Awaze tibs and I got Loza's tibs. It only took 15 minutes to prepare and while waiting, Genet mentioned that they had recently been approved for some outdoor seating and hoped to have that setup soon. On my way out with food in hand, Genet (the owner and Me's wife) said next time if we called ahead, she could help us by preparing a selection of foods to eat. That way, we could try many things and have a better understanding of what we enjoyed. I love these people. I couldn't wait to get home and enjoy our food. Awaze was stir fried in a spicy sauce that was so dang tasty. Among the delicately sliced chunks of beef were shavings of a green pepper (perhaps a Jalapeño) and thin slices of onion. My mouth was immediately on fire in the best kind of way. Loza's was just savoury, tasty, and delicious. It too included little slices of onion and Jalapeño. Both were served with a big piece of injera, the spongy, delectable soft pancake-like bread eaten by Ethiopians. After eating all of mine, I waited most impatiently for my wife to leave me her leftovers. Both boxes were cleaned out! I am excited to go back. I want more now as I write this

Tibs are cooked beef served on injera bread, with tomatoes, onions, and bell peppers, along with spices. The meal is meant to be eaten with your hands, using pieces of the bread to pick up the beef and vegetables. Injera has the texture of a sponge, but it tastes great. It is made from a type of grain called teff. I also had some coffee which was very strong, similar to Turkish coffee. All of the ingredients were fresh and tasty. I think the total came to about $20. They also have a good selection of breads, grains, lentils, spices, coffee, and tea. This place is a good introduction to Ethiopian food if you have never had it before. Keep up the excellent work.
