The day can be just so-so....I can be going about my usual routine... and then upon biting into said sandwich there's a total change in my attitude. The whole day is better. I'm smiling brighter. There's a new bounce in my step. And, if it's a great day...it's even better. Yesterday I picked up one of these perfect tuna sandwiches (along with a turkey one) for a shared picnic lunch with a friend. The sandwiches came with a choice of pickles, cole slaw, or applesauce as a side. Cute! I chose the cole slaw for both. SUPER YUM! It was a no mayo, but rather oil and vinegar dressed finely chopped mixture of cabbage and green peppers with the delightful addition of celery seed. But back to the sandwiches.... The bread (rye) was fresh..... the lettuce (leaf) was crisp.... the tomatoes ripe. The turkey was high quality real turkey breast with just the right amount of a delightful cranberry mayo. And that tuna..... fabulous not-too-much mayo albacore tuna salad, and lots of it. Definitely a two-hands-needed sandwich.... and that was for each half! I'm still smiling!

This cake has changed my mind and added something new to my pallet. The cake was delicious. The Chantilly frosting was a mix between buttercream and whip cream.
