Pedro, the owner/chef, purchases 40 pounds of carne asada per day and when he runs out - which he does, every day - that's it. Sometimes it's 11pm, other times it's 5pm. The beauty of his tacos isn't just the perfectly seasoned and professionally diced meat; it's not the beautiful double layer of onions (diced raw & carmelized) nor the fresh cilantro & cabbage; it's the tortillas, which are just crisp on the outside and soft, almost doughy, on the inside. Slightly larger than the lid of a Starbucks Venti, these small beauties are the perfect size vehicle for this ideal collaboration of ingredients. They also have a sweetness that I haven't previously detected in tortillas, and it makes all of the difference in the world. Absolutely outstanding - nee, amazing - and worth the trip alone. They also made artesinal tequilas onsite that they offered tastes of. My husband and I opted for two options: Shrimp with rice and salad, as well as a meat dish in some sort of stew. They came with warm tortillas and sauces. We also got 2 glasses of their artesanal tequila. The food came out quickly and was full of flavor. The portions were the perfect size--not too big or small, and the tequila was honestly pretty nice. There were a few additives in the products, but it still went down smoothly. It was a nice relaxing spot, but we didn't go on the cave tour to see the ruins. Since we were pressed for time, we opted to leave. It was a nice setting and enviroment, and seemed to be quite a few people coming in to either enjoy the views or eat at this spot. The quesadillas come with beans but they're cooked with lard. At no extra cost, the waiter was able to substitute the beans with steamed veggies. The food is delicious.
