A description of it would be: The honey is prominent in flavour but not in sweetness as we are bound and determined to break the assumption that honey drinks have to be sweet! Our hop combination is strategically added to the batch so as to not make it taste like an IPA beer but more of a floral, hoppy accent to the traditional mead. Some information about this unknown, quiet but yet popular brewery in a small town is: Located in Clearwater County, near Caroline, Alberta, Tamarack Jack's Honey and Meadery buzzes with activity and excitement. Our bees work endlessly to make the honey that gave us our start. You see, at the meadery, we use our very own raw honey that comes from the various wildflowers and plant species that surround us. Fortunately, we are not located near any canola or other harmful, pesticide sprayed fields, so our bees are safe and our honey is extraordinary. As humble farmers, we live for serving the great people of Alberta only the best. That is what you can expect when you try our mead. Made from all Canadian ingredients, our mead is light, refreshing and different! We put a new world spin on an ancient recipe that will be sure to leave you wanting more. The process to get our Class E Cottage Winery, Class D General Off Sales and Class B Tourist Facility Licences, was a long, hard journey but worth it! Having been open only since August of 2017, Tamarack Jack's friends and family have been working tirelessly to provide our fellow Albertans with a product that we are passionate about and truly believe in." Who is Tamarack Jack? Tamarack Jack's Honey and Meadery is situated in a location surrounded by tamarack trees and willow. Imagine: a tall rugged man trudging through a tamarack forest with axe slung over his shoulder, dragging behind him an antique crosscut saw. Weary after a long day of logging, he slumps into his chair. With muddy overalls rolled up over his boots and blisters inside the palms of his hand he reaches for something cold to soothe the pain. Of course, after a hard day, what does one require the most to lift their spirits? A nice cold drink. Tamarack Jack reaches into the icebox and grabs his first bottle of Buzzsaw, knowing that the cool sip of his fermented honey drink will wash away the days burdens.
