The first evening, I had chicken enchiladas. The second night, a ground beef burrito. Everything was tasty and super-fresh. They serve a simple little garnish/side of lettuce, pico, and sour cream. Nothing fancy, but you can taste the freshness. The beans and rice were excellent, also. Chips and salsa, you ask? Superb. The salsa is excellent. I'd probably prefer a little more zing. But the flavor was great and, get this...it's nice and chunky, which I love. Great chips, too. Like everything else, fresh. The service is wonderful, too. Very nice staff. The parking lot was packed both nights. Always a great sign, especially for Monday and Tuesday. Monday was bingo night and Tuesday was trivia. It was rather noisy, but patrons were having a blast. Our server Miguel was kind, attentive and pleasant. We will definitely be back.

I liked Casa Grande a lot until one of their servers was rude to me (it's a character defect that I hold grudges.. sorry) and I also really like El Milagro. I had heard about a salsa bar at a taqueria and so we headed over to try Taqueria Don Carbon. We ordered camarones a la diabla, birria tacos w/carne asada, nachos and ALL the salsas. Not everything is pictured. All the salsas are spicy and flavorful. The salsa verde has a traditional tang that I love, the guacamole salsa was the hottest and the two red salsas were hot and very hot. My nose is still running. The chips were warm and salty. All of the food was rich with traditional flavors. Onion, garlic, and chilis galore. The rice was moist and full of flavor and the beans tasted homemade and yummy. They definitely weren't and afterthought. The birria tacos with consomé got a rave review from my husband. He said they were one of the best things he's ever eaten. Oh and the corn tortillas were homemade and served piping hot. They gave us a ton of them. The salsa bar! I'll keep going back just for the salsa bar. If you love authentic Mexican salsas then you HAVE TO go to this place. The serving sizes were large and we brought a lot of the food home, enough for another meal easily. Ambiance was classic taqueria, nothing fancy about this place except the food! The salsa bar was clean and self serve! Bonus points for speaking Spanish to the two guys working there. I love speaking Spanish! They were friendly and helpful. The bill for all of our food was $20!! I highly recommend this place to anyone craving west coast taqueria flavors. This place has moved into first place for Mexican food in Cookeville.
