I'm a Texan so I LOVE beef, but have spent enough time in South America to enjoy some texture instead of the velvety smoothness of a tenderloin. Check out their website. All sorts of cuts are available and they all put supermarket steak to shame. I took a pic of a tomahawk ribeye, a flanken rib, and a Dino Pop, which is a MASSIVE osso bucco I can't wait to prepare. We are experimenting with cold smoking before searing. This is special occasion beef, but I'd suggest you get some for every day use.

Well, I found the time the other day and couldn't have been more pleased. I knew it was going to be good when I walked in and the first thing I saw was Gateway Drum smokers and PK grills. I was greeted by the gal working (I didn't catch her name but very nice, lots of tats on her arms) and she told me the shop is family owned and the cattle all raised nearby. She then walked me through the market and talked to me about all the various cuts and their given versatility. Though I'm not a classically trained chef, I cook often for large groups and have cooked in a restaurant before so I was already familiar with all the cuts but I remained quiet and listened- I was so pleasantly surprised by her depth of knowledge. Their selection is outstanding- ground beef of every ratio imaginable, sausages of all types, briskets, tri-tips, hanger, Denver, Flat Iron, London broil, chuck roasts, eye of round, beef ribs of every variety, tomahawk and traditional ribeyes, New York strips, flank steak, skirt steaks, tenderloins, half tenderloins, Thor's Hammer, Oso bucco, beef cheek, lengua, You name it, they had it on hand and it was great quality cuts in cryopack ready to go. Excellent pricing for Wagyu too. I spent $200 and walked out with several excellent cuts and am already planning my next stop in. Don't pass it by on your way through, great place!

You find it because you are meant to. Country Mart is as simple as it gets, and that is exactly where its charm lives. I was hungry off the road and ordered a chicken quesadilla, plain chicken with bacon and jalapeños. No frills, no funny business. Just trust. The lady with me went straight for the local Tuesday special, steak fingers. I did not get one myself, and I regret that. They came out looking fresh, homemade, and exactly how steak fingers should look. Golden, honest, and made by someone who knows what they are doing. Now, the quesadilla. Crispy, packed, and clearly made with intent. This was not some lazy throw-together. This thing had heart. It had purpose. It had soul. Every bite delivered exactly what you want when you order a quesadilla in a place like this. And the sweet tea. Mate, the sweet tea. Cold, strong, and perfect. The kind of tea that reminds you where you are and why you stopped. All in all, this was a very pleasant and completely unexpected turn. Country Mart is the kind of place you remember, the kind of place you come back to, and the kind of place that deserves all the attention it can get. I'll be back.
