I was doing a brief traveling in Oaxaca and decided to look for a Cacao tasting class while there…read more(since Cacao was frequently mentioned in Aztec / Mexican...and even Oaxaca specifically in some cultural aspects). The cacao tasting class that I did was at Chimalapa and I loved my time there! I loved that even though I happened to be the only person who signed up for the class during that time (e.g. signed up for a group class but it ended up being 1:1 class since I was the only one who signed up), they really took the time to introduce me to Cacao and the different things that I could learn about it! Acomalli (a sweet lady who worked there) took the time to explain and answer all the questions that I had..and I never felt rushed at all. I also loved that I got to try different variety of cacao drinks...and you can definitely taste the differences from the different cacao bean types/mixes! If you are in Oaxaca, definitely take a few hours out of your time to visit this place! They do make cocoa powder/cacao and chocolate out of this shop as well...and you can open up your senses to learn, see, and taste all things cacao for yourself!

Here's what you need to know: PERFECTION! Greatest culinary activity/class of my life…read more I cannot overstate what an experience one receives at Chima Chocolatrie. It is truly a gem of a place as compared to any food driven experience in the world. We visited Oaxaca from chicago and were truly lucky to discover this incredible private tasting we enjoyed here with Diego and the owners of Chima. Diego is one of those magnetic people who is full of integrity, knowledge, kindness and educates you through the magnificent and one of a kind elite and world leading quality chocolate you find in Oaxaca. From the moment we entered to 2.5 hours later when we left, we were in a world of chocolate/gourmet fascination and indulgence that is unparalleled. We learned about the cacao fruit and its roasting process. After doing a great tasting of nibs and chocolate, we threw on these gorgeous Oaxaca textile aprons and roasted our own cacao beans on an old fashioned clay pan, shelled the beans, ground them by hand in a hand cranked mill, and blended / made our own hot cocoa - best I've had in my life. It was a lot of chocolate and an incredible amount of captivating fun - even from our 7 and 10 year olds. Then you get treated to some of the freshest baked bread with fresh strawberries and cacao nibs for a balanced and delightful treat alongside your hot cacao. This is a singular experience that cannot be beaten anywhere in the world and the $75 per person we paid for it (Jan 2024) is so incredibly reasonable for the flavor, effort, quality, and intellectual property that we were privileged to enjoy. We even purchased some unique white bean chocolate ($10/ small bar but certainly worth the quality) to take home which tasted on sunflower seeds and fresh roasted nuts. Just WOW! Thank you Diego and the Chima team.

Grabbed seven chocolate bars to take back home to the states and when I got home with them the next day, I opened them up and all of them were completely oxidized, they had all gone bad... And were completely inedible. Emailed the website... No response... Super disappointing to spend $32 on chocolate that I just had to throw away. Also, what a waste of what was likely once good chocolate. I suspect it was stored somewhere too hot.
