We finally settled on the ragu bianco with fresh homemade pasta, veal, pork, sausage, garlic and rosemary. It was meaty, chewy pasta, nicely blended spices and the perfect amount. A very good and hearty dish. A Margherite pizza accompanied our order with light and tasty sauce, good cheese and good blend of light seasoning that did not steal the show. A really good choice. The staff here is lovely with everyone is hustling and working hard. A quick aside: While we were eating in the square, siren went off, drums were banging, whistles were blowing, 200 noisy people marched around the square with banners and flags, peacefully. We asked our beautiful young waitress what is going on. She explained this neighborhood won the last Palio di Siena and they were here to let everyone know that they were the champs.
