We had a wonderful meal here on our visit to Steamboat Springs. The ambience and service are wonderful and the food we had was incredible. The hot honey brussels were crispy and a wonderful combination of sweet, salty and spicy. The pot pie was flavorful and the meat was fall apart tender! I ordered the chicken fried steak and it was one of the best I've ever had. The bread pudding made with croissant pieces was an incredible way to end the meal. Don't forget the drinks. Man...I miss Carls. And yes, I know this is the "New" version, but I can't help it that I miss the wings. The ambience is great! I loved the change in scenery. They've got an acoustic system that works well! The new decor has a good vibe to it. The food - I've got mixed feelings about. Again, I know it's supposed to be different, but there are hints of Carls on the menu that serve as a reminder of glory days. For the starters the cornbread wasn't the same, but the bidness fries, and brussels were great as always - just like it was when it was Carls. The potstickers let's just say there's nothing Asian about it. Some good feedback - Most of the main courses were good; the steak frites - nice. The meatloaf very nice. The burger nicer. Desert..eh. The bread pudding, while it looked like a garbage pale leftover plate did taste good - the bourbon caramel came across tasting like bananas and made it interesting. The carrot cake was on point . Being such a fan of Carl's (the former place) I know this review is influenced by the many years of great food and experiences. However, generally speaking, it's not the same and I know it's not supposed to be, but I walked away with a bit of separation anxiety. I'm not sure I'll come back. Delicious!!! We came in with a party of 10. Most got the "Fire Roasted pork chop" and the "Chicken Fried Steak" and thought their dishes were delicious! I got the "Gulf Shrimp and Grits"after being recommended by our lovely server, Rosie, and it was amazing! A MUST-HAVE! Our server Rosie was super attentive and overall FANTASTIC! Even after one of our party members realized there was okra in one of their dishes and couldn't eat most of their meal, we asked Rosie if they could accommodate our bill and she took care of it without hesitation. After a few days of vacation eating, we went a little lighter here. My arugula salad was tasty and both cocktails and wine were excellent. Cornbread was as sweet as cake - pepper jelly helped mitigate that, but still was not what I expected. Very attentive servers and I like the cozy atmosphere. We came to Cypress for happy hour and had a great time. We chose the espresso martini and the infinity old fashioned, both of which hit the spot. The Brussel sprouts came out perfect and I'd highly suggest trying them, and my wife was a big fan of the deviled eggs. We went for NYE and sadly it was a big let down. The best dishes we had were the deviled eggs and the Cobb salad. The worst dishes we had were the cornbread, red fish. The cornbread was so dry and dense barely tasting of cornbread. For sure worst cornbread I've ever had. The red fish was SO dry and so was the rice, but I was starving at that point. Out with the family for an unplanned dinner...We were dropped off downtown and walked around looking at restaurants and their menus...old school fashion. Luckily we found Cypress. The Owner, Collin, was at the check-in stand and overheard our conversation asking about wait times as it was a busy Saturday night. He graciously created availability for our family. The food, atmosphere, and service were tremendous. It is low-key one of the best restaurants we have visited while on ANY vacation. The serving sizes were ample and filling. We dined on the brussel sprouts, pork chop, chicken fried steak, Caesar salad, hamburger, and baked chicken. Each dish had a southern flair full of flavor and confidence. Pro tip: the blue cheese stuffed olives were large, oily, and flavorful. Best olive I've eaten. Pro tip 2: if you like pimento cheese, find a way to get a small serving. It comes on the burger and is out of this world good. Our server, Dragon, was outstanding. He was great in answering questions about the menu, substituting any food concerns, and let us enjoy our dinner without being pushy or inattentive. Excellent food, service, and atmosphere. This is definitely one of my new favorites in Steamboat. Our waiter, Dragon, was helpful in narrowing down our choices (so many excellent options!) We ordered the Farmers salad split as an appetizer which had melons, tomato, cucumber and a delightful fresh vinaigrette. Next, we had the meatloaf and the pot pie. Both were best in class but the meatloaf was incredible. It was a serious portion of tender, not too dense meatloaf topped with a rich umami tomato sauce. On the side the thick tomato jam and the perfectly textured mashed potatoes made it extreme comfort food. I had a Trees Knees (classic Bees Knees) cocktail and my partner had an old fashioned. Cesar salad was mid and the lettuce leaf was too gigantic. BLAST sandwich was not bad. The hot honey chicken sandwich was good, but a hot honey was really messy and made the bread soggy. Amaretto sour was 10/10 would get again. However, clarified milk punch AVOID AT ALL COST. Devil eggs and Brussels sprouts were yummy. Eggs were really salty though. Service was kinda awkward. This was my second trip to Cypress. I really like the new look and the service has been great. The first time, I had the meatloaf and it was good meatloaf, nice size portion and very comforting. Also, had really good Brussel sprouts. My second trip, I decided to try the Chop Chop salad with Fried Chicken. Unfortunately, I did not pay close enough attention to the menu and I was not happy with the mixed greens. I am more of a Bibb, Romaine, or Iceberg lettuce eater. That was my fault for not paying attention when I ordered. However, the Fried Chicken was almost non-existent, and if there was any in the salad, it was hardly noticeable. Very disappointed. Another person at the table had the Kale salad and ordered it with the Rotisserie Chicken. She said that she could not find any chicken in her salad. I don't get it. Put some Freakin Chicken in the salad!!! Don't advertise Chicken or charge for adding Chicken, if you are not going to put the Chicken in the salad. My wife had the Rotisserie Chicken for her Main plate and it was a very large portion and very good. We had some deviled eggs and they too were good, and the cornbread tasted like dessert, it was delicious. Everything was good or great, except, Where's the Chicken in the Salads?! Would have given Cypress a 5 Star, if there was a decent amount of chicken in the salad. I am hoping it was a one time thing and that there usually is chicken in the salad. read more

This was the best dinner experience I've ever had. I went with a group of my friends and we all had a good time. Our server was super friendly and immediately came to great us when we sat down. She then continued to check on us frequently thought out the dinner. And the food was amazing. We got the rotisserie chicken, the cypress burger, and the fried chicken. Cypress! What a delight this spot was. I love southern food and this was so good. We started with the honey glazed Brussels sprouts and the Bid-niss!!! Hand cut fries bacon, ranch, and green onions! Completely addicted and you must try!!!!! I had the Craigs meatloaf, it was moist and flavorful and served with mashed potatoes. I could eat it everyday. The bar area was fantastic and we enjoyed watching the first round of the playoffs from there. The bourbon and wine selection is amazing! Oh how we miss Carl's Tavern! Apparently the original founder bought it back and turns it to another Bourgeois faux luxury mountain Restaraunt that are a dime-a-dozen. The menus gets credit for attempting to provide a southern inspired cuisine but it falls short on execution. The meatloaf was inedible, by everyone at the table that tried it. It is simply awful, basted with a super rich over flavored Demi glaze (I mean who puts a Demi glaze on meatloaf) when a simple tasteful brown gravy would have been perfect. Oh and they did not even offer to comp the wasted dish which would have been appreciated for a $335 dinner for two adults and three kids. The chicken pot pie was almost good, the broth was too sweet but with loads of pepper I was able to balance it out and it was much better. The seafood gumbo was better than expected and resembled the authentic Cajun dish. The craft cocktails were hit miss but either very strong or very concentrated. The reprove was attentive but we did not like the server, a bit of an attitude. Overall this neither has the down-home charm of Oneill's, Brass Kitchen or the former Carl's Tavern nor the authentic craftsmanship of E3 Chophouse. The pecan pie was good but too sweet, just like everything else it was over done, as if they are trying so hard they missed the subtleness that creates excellence. This tourist trap is an odd fit for steamboat and would belong better in Breckenridge! We are not going to be repeat customers. read more
