Anyways, let's not get my rant to ruin the review. Four Story Hill Farm is a very small operation but they bring some of the best raised meats to some of the higher end and distinguished restaurants in the country. Their beef is awesome and I recently tried a 110 day aged version. Talk about a unique flavor profile. Ever heard of milk fed poularde? Me neither but it looks like one of their breed has taken on to it like cattle do. Makes for interesting flavor profiles. Well raised animals, in a caring small operation, with the end product being tasty and flavorful
