This is the more intimate portion at the back of the building perfect for a quiet dinner compared to the many windows sunny breakfast area in the front (The Early Bird). Clever! We've actually had a fantastic breakfast there; at the time did not realize the connected restaurant in the back for dinner. All of us loved our food: shared appetizer Brussels Sprouts, Yakitori Bowl (minus chicken, added egg), Pork Belly Rice Bowl, Ramyen and a Kimchi Quesadilla off the specials menu. I left a tip a bit higher than what I normally would. The part though that is irritating to me is they charge a 3% credit card fee. This restaurant is equidistant between banks that I use. If I had known of this fee I could have had cash. Banking fees should be built into your pricing. $40 for a 10-12 ounce prime rib should contain enough profit to absorb the credit card fee. All in all a good meal that mostly checks the excellent box.

The menu is a multi-level, fixed-price, buffet of Korean / Cambodian food -- mostly meats. Pork and beef. You order on an electronic tablet. There are rules: you have ONE HOUR to order anything you want, you can order multiple times, but you can only order six meats at a time, and each order must be spaced 15 minutes apart. Your food arrives raw -- YOU do the cooking, at the table, on a steel hot plate heated by gas. There is surprisingly good ventilation. So you get to decide on how each item is cooked. There are also lots of side dishes, and a salad bar, and endless drinks. You aren't required to finish eating in an hour -- just make your final order. The quality of the food is SUPERB. The service is attentive and excellent. But you better freakin' love meat. Lots of meat. And you better be hungry. The multi-tier pricing gets you different "elite" meats, like wagyu beef. I choose the lowest tier, at $32. Some tiers are $48, or even higher. Since it included everything, $32 seemed a reasonably good value. But -- and here is my one nitpick -- and it's a big one: this is not a relaxing place to eat and converse. I felt constant pressure to eat, eat, eat -- especially during the first 45 minutes. Because of the time spacing rules, you might feel that you need to get those orders in right on the dot. Plus, the meat generally cooks in a couple minutes, so you need to watch it carefully. It's easy to get lost in a conversation. Frankly, it's remarkable that Ellensburg has such a high-end concept restaurant with flawless execution. It was packed on a Tuesday night (reservations recommended), so it seems like it will be successful. I was amazed by the experience, but not as delighted as I expected.
