Fantastic Find: Cocina de Ledezma After a hike, I was on the hunt for some great local Mexican food and found La Cocina de Ledezma--what a gem! The food was incredible and tasted fresh. I tried three different tacos and a Quesabirria, each packed with great flavor. Their birria was especially impressive--it's hard to find good birria! To top it off, there's a coffee cart across the lot with refreshing drinks. I had a Lotus energy drink, and my girl had a spritzer--both hit the spot after a long day outdoors. The service was as amazing as the food. The brother at the register was super friendly, sharing how they prepare everything with care, and his sister in the truck was incredibly sweet and courteous. The two girls at the coffee cart were also lovely and added to the welcoming atmosphere. Though I live far, I'll definitely be coming back. Food was delicious and the service was excellent! We got a few birria tacos and the pamboza. All were delicious and filling. There are tables there to eat, but we took it home. Look for the flags directly after the rite aid. You go up a small hill and it's to the left. The person taking our order was so nice when taking our order. We asked more questions than most and he never seemed bothered. More happy to answer everything about the food. Mentioned it was a family business and they are there every Saturday and Sunday! The staff (Ledesma Family) are all very nice and make you feel welcome... Every weekend they have a different menu, this weekend was Birria (Slow cooked meat) and man was it good...I had the Birria Taco, Birria Quesadilla, and Birria Mulita .....all excellent! You can pick for take away, or they have a nice little area set up with tables and awnings for eating there.... I will definitely go back here.... Well let me tell you about Cocina de Ledezma first off friendly service all the time. The Ledezma familia is always at the top of their game. I am a local here in Valley Center and don't have many options for food but let me tell you I look forward to the weekends when this place opens and having it less than five minutes away is the awesome! Having authentic Birria on the weekends is the best especially when I know family will be in town we head over there so they can try their food and each time they do not disappoint. I've tried their gorditas, Jumbo shrimp plate and birria. For me the birria quesadilla with Consomé is my favorite. They actually had during the weekday a surprise "Aguachile en Verde o Rojo" afternoon this week and man that hit the spot. Best thing is to follow them on Instagram and that way you know of any special days they might be offering their food.
