It was delicious, with a very hard, dry consistency that was not very sweet. A bit on the tart side, indicating they are liberal with the sour cream, while conservative with the sugar. Definitely a great base for a more complex cake, but even though simple is good, the flavor just wasn't appealing enough for me to give it a full five stars. Similar to our first visit, the establishment did not have a line; however, as the friendly employee behind the counter greeted us, a line began forming behind us (look at us being trendsetters). We proceeded to order the following: two cafe lattes, danish (wife), and I ordered the Cheesecake au citron. The Cheesecake au citron was chef's kiss (I do not use this phrase lightly). It moved super quickly though and within 10-15 minutes I had my crookie and left. They have so many amazing other desserts. This place is definitely on the higher priced side of pastries I've seen. The crookie was 5.9 euros for takeaway and it's a bit more expensive if you decide to eat it there. It was so warm and flaky. The chocolate was ooey gooey and it was absolutely delicious. "Framboisier: génoise amande, crème à la vanille de Madagascar, framboises, amandes caramélisées" Never having had a Framboisier, I had to google a couple if ingredients first. Roughly translated, it's a tiny raspberry cake made of a almond biscuit base, Madagascan vanilla cream, raspberries, caramelized almonds. It's about 10cm in diameter and costs 8,50€. Reading the description made me wonder if that price might be worth it. The second my fork cut through the cake, I thought "what is this sorcery?", the second my tongue tasted the creation, I thought "this is sorcery!" Whatever you read what the "génoise" is supposed to be, this one comes from a different level of heaven. I ate this cake as slow as I could, without making the very friendly waiters think there was something wrong with me or the cake. It was THAT good. Instead of drawing ideas into my sketchbook, I marveled about the gentle deliciousness of this cake. For 2 hours. The Framboisier was a worthy last dessert I savored before getting said plane. His first eponymous bakery is quite a sight to behold with its giant facade, glistening white interior and beautiful sweet confections displayed like untouchable jewels. In fact, it's the pristine perfection of everything here and the cold, calculated interior that gave me a chill when I first entered. I was determined, however, to bring something home for dessert for guests but when I saw how fragile and expensive the cakes were (cakes for 4-6 are about 30E) I opted for a Kougelhopf instead. Served with some vanilla ice cream, the sugar-and-almond-coated brioche was a light and lovely dessert, but nothing I'd run back to the bakery to experience again. Maybe it's all about Sebastien's other eye-pooping desserts, but with so many amazing bakeries on the block (e.g. Delmontel) I'm more inclined to go back to where the price/quality ratio is guaranteed.
