My personal favorite is the homemade ricotta cheese ravioli with nuts and the tomatoes and creme sauce. Ravioli de Ricotta y nueces con sala rossa. Yum! I love it so much that we would go to the take home entrance of the fresh frozen pasta and pick up boxes of the Raviloli - Ricotta y Nueces as well as Ravioli de Ricotta y Jamón and Ravioli de Carne to take home and make for ourselves throughout the month. Italian is widely available in Chile and overused in descriptions, I would call this Italian fusion at best; my colleague is from Chile and suggested Peruvian this is where we went, so this Italian title is not 100% accurate, more like 25% since one special out of 4 was pasta based.
