I searched high and low for different vendors that fit the fusion that we wanted, but couldn't find anything that fit just right (or that didn't break the bank). Then I somehow stumbled across Rebel Catering on Google. They had a wide variety of packages for food varying from Asian, to bbq, to Mexican. They didn't have a ton of reviews, and it seemed like they mostly did corporate events, but I gave them a call. I'll be honest, I was a bit apprehensive of how incredibly chill Rahul is at first (because I was already stressed out), but when I told him about our vision, he immediately checked with his chefs and created an incredible menu for us. My mom and mother in law's primary request was copycats of the other restaurant's corn fritters, and he even delivered on that. I'll attach a picture of the menu, but our minds were blown at the quality and freshness of the food. Buffet style brisket is HARD and he and his team crushed it. I even had friends with allergies and he accommodated them without question. The most popular part of the night though was the shaved ice. Part of Rebel Catering is their shaved ice package with alcoholic shaved ice (TABC bartender included). They had custom flavors to match our Asian fusion theme, and even brought their truck in to serve our guests! They also created a custom flavor named after our cat and created a sign with a cute cartoon of him. They also had tons of other drinks including sodas, jelly drinks, boba drinks, and energy drinks. We had gone back and forth with Fritz about changing our vegetable to asparagus which they informed us would be an up-charge. No problem, we signed up. The day of the wedding, they only had enough asparagus for about half of our guests so they were left with no green/color on their plate. Fritz offered to pay us back for the 75 guests that did not get asparagus, but in my opinion they should pay us back for the whole up-charge fee. Running out of food should never happen. Also, we paid to have them take care of the bar at our wedding. At one point, I walked over to discover they had run out of ice and someone was having to go get more. Again...shouldn't happen. The pros are that the staff that was at the wedding were very nice, but I would probably go with another company if I had to do it all again. The food is such an important part of the wedding and there's no reason to be running out of anything.

The sweet gal taking the orders also said that they would bring it out when it was ready, but we waited a solid 30 minutes and decided to ask. Their chips are great (I love the thicker tortilla chips!) and have a more solid crunch to them. The queso is on the lighter and thinner consistency side, which is always a refreshing texture. They definitely use a lighter cheese instead of a dark cheddar, as shown through the color of the queso. It's got a great flavor to it too without having any extra add-ins. A nice traditional queso! The fried pickles were average, but my bf is obsessed with pickles...so that was his impulse buy. Not sure if I would say this is a steady food truck that I would come back to outside of the brewery, but I'm glad it's at Guadalupe! Good choice for snacks and probably their po boys!
