Having been a long term customer of the nearby St Andrews chip shop, I thought I'd give Carlos a try tonight as its had some excellent reviews here. When I saw the fish under the lamps, I should have suspected something as it was very light in colour
Got it home after a 2 min walk and found the batter was far from crunchy. In fact it was more like a soggy pancake wrapped round the fish. It was sticky and you could stretch it to twice its length! I kinda wish I'd taken some photos - there must be an alternative use for it....
The fish inside was perfect - really nice solid piece of fish, very moist and melted in your mouth. The chips were fairly poor - a bit soggy and fairly greasy but 50% of them were edible
My advice for Carlos would be
- Reduce the egg in the batter if used and perhaps add some beer to keep it crisp
- Ensure the oil is hot enough. I suspect the problems were down to the oil not being fully hot
- Dont lay the fish flat on the tray under the heat lamps, stand it up to allow air to circulate to keep it crisp and allow the oil to drain
- Avoid the plastic sheet over the fish or the batter will steam while wrapped and go soggy read more
