This place is a no frills butcher shop and I was waiting for them to deliver my freshly killed pig to the shop for a few minutes. They dont butcher it on site, but get it from an amish farmer. They sure do a fantastic job splitting and cleaning the pig. I asked for the liver and heart for my mom this time as well. It is super difficult to find a fresh 70lb oinker! Most places offer it frozen, but at Chuck's you can get it fresh! It ran me about $242 this year and it was well worth it! Love this place!!!

The Owner, Alex, answered and gave me some great information-- most importantly that he DID have a Brisket and he COULD accommodate our request. Whew!!! When I arrived, Alex showed me the meat and discussed with me the options for trimming off the fat and trimming it down to the size I desired. Alex's staff -- both the store personnel and the actual butchers -- were all friendly and helpful. Alex gave me a tour of the store and I bought a bunch of cheese, dried fruit, etc., while I was waiting for my USDA Prime Brisket to be ready! Such a nice store! Such nice people! Not the least expensive cut of meat I have ever bought ... but WOW!!! The meat cooked perfectly!!! This was literally the single BEST brisket I have ever eaten (and I have eaten a LOT of brisket in my life!)!
