It is still definitely a store for chefs and people in the food, industry rather than tourist. More tourist are going to the shop, but it doesn't really accommodate a lot of people. My daughter actually went to purchase some cooking supplies.
Each piece is marked with a number You then go to a book and look up the number to see the price of the item. The staff were helpful if you ask them questions.
