Bread and Flours feels like a hidden gem in Palm Springs. Tucked away a bit, it feels special, and honestly I'm surprised there isn't a line around the corner. This sourdough bakery is super cute, the staff is always top notch and genuinely friendly, and everything we've tried has been excellent. The sourdough is exactly what you want: just the right natural tang, a soft interior, and a crisp crust. They also carry and make so many other amazing items beyond the bread itself. The staff gives solid recommendations, and even when they have things we've never heard of, they take the time to explain them well. Their baked goods are consistently fantastic, and the citrus-marinated olives never even make it all the way home because we end up eating them in the car. Bread and Flours is what I've been hunting for since I arrived in Palm Springs: real sourdough, four ingredients, and I asked before I bought. Most bread sold in this country is an engineering problem solved with a chemistry set. Twenty-odd ingredients, half of them unpronounceable, all in service of a loaf that can sit on a shelf for two weeks and still pass for food. I've been reading those labels since I got here, and putting most of them back. So I asked Kristin -- who owns the place with her husband Mark -- what goes into the sourdough. Four ingredients. That was the entire answer. You can watch the argument for it before you taste it. Mark works behind glass at the back of the shop, which means the bread isn't a product that arrives, it's a process you can stand and watch. Most of what's on the shelves is made there. The loaf earns a sales pitch it never bothers to make. The crust is hydrated and resists -- it doesn't shatter, doesn't crack apart, and never makes you work your jaw to get through a bite. Behind it, the crumb is tight and custardy, tears cleanly, and holds under work without saturating. The sour sits somewhere between lactic and acetic, neither overbearing nor understated. The bake is blond, the texture substantial -- chewy without ever becoming exhausting. If you come to sourdough chasing a crust that shatters and blisters, this one will disappoint you. It isn't built for that, and holding it against the loaf would be a mistake. A crust that splinters is a crust that quits the moment you ask it to carry something. That's the whole test, and most sourdough fails it in one direction or the other. Bread that's lovely with butter and jam collapses as soon as you build on it. Bread engineered for a sandwich is dull on its own. This does both without compromising for either -- plain with butter, or loaded up as a gourmet sandwich with everything inside, and it holds. Eleven dollars a loaf. Below what this level of craftsmanship could command. The Sourdough Chocolate Chip Cookie is soft, with a properly caramelized exterior and just a hint of sourdough running underneath the sugar. The chocolate manages smooth and sharp at the same time. The Seasonal Strawberry Oat Crumble Bar is built rather than assembled. The oats are chewy and read as sweet oatmeal, not the dry feed most bars settle for; the strawberry is fresh, tart, and clearly deliberate, nothing like the thick gelatinous jam usually spooned into these things. The crumble is buttery and hydrated just enough that it doesn't lodge in every crevice of your mouth. It sits on a crust closer to a well-baked pie than a bar base, and nothing in it overpowers anything else. Both did the thing that separates real baking from the industrial version. You finish and you're happy, ready to get on with your day. Not heavy, not tired. Food is meant to energize you, not slow you down. Most of what gets sold as bread does the opposite. read more

Genuinely confused by the five star reviews - everything tasted subpar, unfortunately. Tried their blueberry scone (forgot to snap a photo), the strawberry oat crumble bar, "the bar," and the socal sourdough. The blueberry scone was the only thing that tasted ok, but it's nowhere near the quality of baked goods you can find in SF. (After visiting two separate highly-rated bakeries, I've come to the conclusion that Palm Springs just doesn't have great bakeries.) "The bar" is quite possibly the worst baked good I've ever tasted - this coming from someone who will actively seek out local bakeries in every city visited. The strawberry oat bar was not great either; it tasted like something a child might make by slathering smucker's strawberry jelly on a base made from oats, flour, butter, and sugar. Nothing special about the sourdough. I can appreciate their commitment to baking without preservatives, but it should be possible to do so without compromising on taste. It is quite possible that this is the best bakery in Palm Springs! (Vegan or not). No kidding around when it comes to freshly baked bread. Come here for fresh baked breads, fresh pastas, pastries and everything that goes with. Its all VEGAN! There is no other bakery in the valley that is all vegan, so you can trust anything that comes out of their kitchen. They feature a limited menu tightly focused on superb quality above all. (And they succeed) Honestly, their bread is every bit as good as anything i have had in Paris, Amsterdam or Prague. Their baguettes are flavorful, crispy on the outside and soft on the inside. Just like you get in Paris. Check their hours, they open only two days a week. Then come here directly for the best freshly baked bread in the entire Coachella Valley. Bread is very dense and inedible. We ordered an array of different baked goods which were all very sad as well. Unfortunately, this place is a miss for us. Whether it's vegan or organic, it simply is not very good or tasty. And I'm solely speaking on the several baked items that we purchased. I cannot speak to the other items on their menu. Service was very nice and as well as the ambience.. I would save money and simply drive to Los Angeles, where we know there are delicious baked goods, and bring them home. We are visiting Palm Springs and were looking for a loaf of sourdough to get us through Christmas. Lo and behold, we found Mark's place. He was tending shop while his wife and mom were in back. What an absolute pleasure to meet him! We ordered a loaf of his sandwich sourdough, a loaf of cornbread, a cinnamon raisin loaf, a blueberry muffin and a peanut butter cookie - I know that's a lot, but just want to show the breadth of skill here. Everything we had was absolutely delicious. We basically made a meal out of the cornbread. The sandwich sourdough is amazing - not too sour, fantastic crust and crumb. The blueberry muffin lasted a New York minute, it was fantastic. Same with the cookie. Wow. We wish we could leave 10 stars. Couldn't ask for a better bakery, much less a better baker. It is Thanksgiving Day morning. Despite all the odds I went on the hunt for some fresh bread. As I arrived at Mark and Kristen's place it was obvious that it was closed. But ... there was Mark stepping outside and offer me his bread, nevertheless. This delicious cranberry, pecan loaf and baguette. During the duration of my project I had about 3 visits to this location and every single time I I was gifted delicious loaves of fresh bread, blueberry muffins, granola etc. what a treat!! It pains me to say this, but I did not love the loaf of bread we bought here. We tried the sourdough and while the slices were dense and had a nice chewy texture, none of us particularly enjoyed the flavor. The three stars are for the owners who are so incredibly sweet. Just made it in today after seeing they had pumpkin bread and so glad I did . Kirsten was so friendly and welcoming even though she was finishing up with a customer that arrived before me. I selected what I wanted and chatted with Kirsten for a moment as no other customers were in the store. I'm so used to a nasty attitude from another French bakery that the customer service I received here has made my day.
