Normally authentic Ramen not…read moreclose to a major city(NYC, Boston, San Fran) would be a major red flag but Michigan in general is quite diverse and to be honest, has not failed me yet. Sapporo is not about to break that trend! Right off the bat, the vibe is chill and the staff is welcoming. I go for the Takoyaki and Hakata modern. The Takoyaki is absolutely delicious. Wonderful balance of texture and salt vs sweet. Easily top 3 I've had. On to the ramen....which I was ready to be super hyper critical on. Hakata modern features Tonkotsu pork broth, chashu, ajitsuke tamago, menma, beansprouts, garlic oil, umami dama, and scallions. Final verdict? The broth is rich and flavorful, and there is plenty of it! The ramen egg is a tab bit overdone and the chasu can be a little more tender but who am I kidding? It's pretty damn good! The best part of all? Sapporo sits at a very reasonable price point while not compromising on high quality. All in all, very much worth a trip while in the area. Sapporo slides right into my go to lineup :-)

Sadly I couldn't finish the bowl because of it. The egg yolk was also served cold, which didn't help. On the plus side, the pork chashu was the highlight! Perfectly balanced between fatty and meaty, cooked really well. I also ordered a tuna roll, which was a good portion size. It didn't taste super fresh, but it was still decent overall. I finished that without issue. Service was friendly and attentive, no complaints there. One thing that really stood out (in a bad way): I noticed they were using an AI-generated menu, which felt really off-putting and cheapened the experience for me.

The prices that are shown differ and makes it confusing to know how much you should be expecting to pay here. From their menu in the restaurant, the menu they have online, and the menu they have places outside as advertisement all have different prices. There is also no menu at the table's physically or even to scan and seems to only have them up front but in the form that should be at the tables and not overhead where you can view from any distance. Ordered two Red Tonkotsu bowls and was let down by the flavor and the fact I was not able to simply add mushrooms to one of the bowls. They lacked flavor and had no real spice to it either. The Bok Choy in the bowls were not cleaned or cooked properly as they were very much still hrs and had a dirt/earthy taste to them still. Was confused by the choice of having a hard boiled egg instead of soft boiled in their ramen. Overall would give a 4/10 for the ramen. You could easily make it at home but tastier and still have left over ingredients for several more bowls. Was looking forward to this place a lot since I saw it and it sucks to be let down by mediocre ramen. Best to just go somewhere else or make it yourself at home.
