The arepa itself was pillowy and tender, while retaining its exterior crispiness. The pabellón was lean and nicely seasoned, and made with a thicker sauce than I'd expected with this dish. Finally, the frijoles, queso blanco, and maduros brought everything together nicely.
I almost returned before leaving Madrid, but ultimately resisted, fearful of potentially spoiling the memory a perfect food moment.
