Loved meeting one of the pulque-tenders and he explained to us the process of making pulque regarding fermentation and the use of the "heart" of the maguey. SO rad. Plus the pulque is much less alcohol content, so it's a great digestive. The power of maguey! Phew! Highly recommend checking these guys out.
