My Lolo (from my father's side) is from Bacolod, but I'm a stranger to that province. I know nothing about it except that they serve the best grilled chicken in the country. Thankfully, I'm no stranger to Chicken Inasal. I grew up having lunch or dinner at Bacolod Chicken House in BF Paranaque. We've seen this place go from having one floor to having two and then going back to one. It's less fancy than most of the restaurants that opened up in the area, but it's been there since the time that BF was just a private, less congested subdivision so we have a strong affinity to it.
It really is a no-frills kind of restaurant, but they serve the best Inasal in town. My favorite chicken part is the pecho (chicken breast), and it's grilled to perfection so that the skin is a little charred and crispy and the meat is white and juicy. I also like the sauce (I think that's what Ilonggos call Annato oil) that leaves yellow stains on my white rice (or garlic rice). Serve that with a really cold drink and I'm good to go.
