After about 20 minutes and a complaint, we got our menus, accompanied by stylish and humourous apologies. OK, maybe a genuine mistake . . . We ordered two single dishes, of which one arrived and a three-course set lunch, of which the first dish arrived. Then, everything stopped again. Following loud remonstrations from the couple at the next table, service recommenced . Starters and salads were normal, mediocre stuff. The sardines were excellent but the cassoulet when it eventually arrived was not. Removing the meat items from the surface (duck and sausage) revealed a solid dry mass of white beans, stuck to the pot and beyond the capability of fork or knife. Oh dear! We decided to leave without chancing dessert. Le St Jean offers classy surroundings with reasonable prices. Service was charming when available and it's a great place to sit with a drink. But the place suffers from the complacency that comes with the location in a World Heritage Site. Cassoulet is the local speciality and a simple dish to prepare. They should be able to do it properly. Big fail.

Our Bulldog was welcome as well, that was very nice. The setting here is stunning. You feel like being set back 500 years. Lots of stone, wood...lots of charm. Waiting staff was excellent, very friendly and helpful. There are some set-menus available but also lots of great items à la carte. Since we didn't plan on spending too much time, we just went for some main dishes. Until these arrived we were served some tasty and free olives and olive chutney. Two glasses of local Rosé with the meal. My wife had the Cassoulet and I went for a house special: The Foie Gras Ravioli, with a piece of Foie Gras on top. The Cassoulet was wonderful. Tender meat (duck, pork, sausage) and a very rich and tasty broth. Beans with a little bite left...as it should be. Perfection. The Foie Gras Ravioli were equally great. Wonderful tasting Foie, Ravioli cooked to perfection. And the Foie Gras escalope on top tender and oh, so tasty. Cooked perfectly on point. A really wonderful meal in a wonderful town. Really a lunch to remember. Prices are a bit on the higher side, but considered the location, the setting, the quality of the ingredients and the wonderful staff it's still a very very fair price you pay. Loved it. Highly recommended.

I began with Autour d'un Plat: a good seasonal salad with tomato, onion, Red Pepper, Green and Black Olives, radish, carrot shavings, and Vinaigrette Dressing, followed by Onion Soup au Gratin, which was slightly burned on top. But the large crock of soup was nevertheless great the rest of the way: hot, cheesy, graced with Thyme, and filled with nicely broken down breadcrumbs and well-caramelized onions. My first cassoulet ever sported white Cannelini Beans and white sausage with Languedoc confit of Canard. The dish was amazingly filling and quite satisfying. I was only able to put away 3/4 of what was presented before me. Meanwhile, Diane enjoyed a medium-rare Filet of Boeuf with mushroom Sauce and Galette Potato with Bechamel Cheese (au gratin potatoes). Rolls were undistinguished, and one fly alighted once on our table. But, everything considered, who cared?! Service was friendly and very good.

I picked the menu with starter, main course and desert on a very hot day and though I wanted to sit outside due to the Corona pandemic, there was no space anymore on the terrace. The very fast waitress - I presume she was actually the owner - asked us after a short and nice chat to follow her upstairs to the second floor, where there was a completely empty space with a very nice view to the city and nobody else but us. The room alone was very nice and we were happy that it was on top quite cool compared to the rest of the restaurant, where the sun was trying to reach 40° Celsius that day. The food served was delicious and the kitchen alone deserved six out of five stars. Local specialities, like the Cassoulet that I had as main course, one of the very traditional regional specialities from the south, widely served in Toulouse with white beans, duck meat, and the Saucisse de Toulouse a very tasty rural sausage are prepared with a incredible good hand in this kitchen. The kids enjoyed a fried chicken with a kind of Béchamel sauce with tender roasted oven potatoes and my wife went for the pork ribs in honey sauce. One would thing this is not the lunch appropriate for the heat, but on the contrary, eating hot and heavy meals in hot days, eases the day quite a bit. Bonus points for the shop owner, she spoke in a beautiful southern French accent that warms the heart, explained the details of a well prepared Cassoulet de Toulouse and brought immediately (like it is quite common in France) bottled tap water in beautiful bottles that were really chilled and made the reception even better. Thereafter we went to see the city, the Cathedral is amazing, and my wife was quite satisfied with my choice of the restaurant, that was way better than the first impression from outside would have suggested. If only more of such local gems would exist, people would stop eating anything else but regional delicacies. The price were moderate and we are sad that we only passed one day in Carcassonne.
