It's not quite as crowded at night, but during lunch it can get really busy as a lot of people get sandwiches or other things to go.
I've gotten the salads both times I've gone, which is a bowl of cold rice noodles, some lettuce and cabbage, and topped with your choice of meat, shredded carrots, some cucumbers and peanuts and a fish sauce dressing/vinaigrette. I've gotten both the shrimp and another time, the pork wrapped in betel leaf. You can also add a nem for 2€ if you want.
I didn't find the meat (the shrimp or the pork/or beef wrapped in some kind of leaf) to be very high quality. There were only 5 pieces of shrimp in my shrimp salad and it was a little over-marinated and salty. The pork wrapped in betel-leaf was grilled and a bit fatty in pieces - I thought this was beef inside but it looked more like pork as I was eating it.
I wish the proportions of the noodles to salad was lower as it's very noodle heavy. Overall, still a good dish and I'll need to try it again with just the normal beef or chicken to see if that's better.
They also have bento boxes with rice and your choice of 2 meats, fresh spring rolls, a few desserts, and sandwiches with different meat options. You should be able to find something to suit your taste, even for vegetarians. I have yet to try lots of other Vietnamese places in Toulouse, but this one is pretty good for the price and speed - I just wouldn't get the shrimp or the pork wrapped in the leaf again.
