I found a market in Dixon Il that makes a dam good fresh breakfast sausage but that's a four hour round trip so that doesn't really work for me so I had just about given up on the good sausage. Since I make jerky I thought why not make my own breakfast sausage and see how that is so when I ran across the Hi Mountain authentic Wyoming recipe breakfast sausage seasoning I thought let's go for it. I went to the store and found about a 1 1/2 pound package of 83 % lean fresh ground pork and away I went. The finished product was a somewhat lean/tasty less greasy sausage patty than the store offers, this was a full flavor great tasting sausage that will work for me and I guess I just have to make sausage now if I want a better product. I can't wait to sample other flavors and see what how they are, yah I'm a fan.
