Began the night with a local beer selection, Star, a Pilsner by microbrewery Alingsås Bryggeri AB. A little darker and hoppier than an American Pilsner but ended up being the perfect compliment for my scallop starter. Imagine seared filet, pan fried guanciale and truffle enrobed in the most creamy, flavorful sauce with hints of black peppercorns and lastly topped with aged pecorino. Sounds impeccable, right? I try to not be that person, the prisoner of the moment.. but taste buds don't lie. Sweden just slaps. Or as they say-- built different.
