Situated atop the Confortel Aqua 4, Vertical is a fitting name for the restaurant. A spectacular view of Santiago Calatrava's Ciutat de les Arts i les Ciències is on full display from the large glass encased walls which is Vertical's dining room. Formally dressed staff which are both sharply outfitted and sharply attentive. After very little deliberation we opted for the tasting menu, even though it was just lunch. It turns out the restaurant group also owns La Sucrusal which we had tried to go to the night before but were too late to. So this would make up for that miss and also see what the modernist side of Valencian fare would be like. Unfortunately I only have the Spanish menu:
- Berberchos en salpicón donde destacaba el sabor a pimiento
- Crema de calabacín
- Brandada de bacalao .
- Esferificación de queso manchego
- Carpacho de viera con aguacate y almendras tiernas
- Atún con brotes de guisantes y otros, con huevas
- Huevo con trompetas de la muerte, foie y caldo de ibéricos
- Merluza con pochas, carabineros y caldo de estos últimos
- Costilla de ibérico caramelizada con salsa de mostaza y castañas
- Gelatina de leche con mascarpone y helado de baileys
- Tarda ce chocolate con helado de chocolate y helado de fruta de la pasión
Another great example of modern Spanish cuisine. A great intertwining of modern updates to traditional dishes. This was probably the most formal of the restaurants we went to in the area, but even so the service was actually fairly comfortable. We were able to speak to the servers and they were happy to oblige our curiosity.
Stellar food, fine service and probably the best view of any restaurant in Valencia. I'll have to hit up La Sucrusal the next time Im in the area due to the stellar showing of it's sister restaurant. read more
